A well-known Chinese soup made with tomatoes, carrots, and potatoes is called ABC soup. Although I’m not certain why it’s named ABC, it’s probably because the preparation is as easy as ABC. It also contains a lot of vitamin A (from carrots), vitamin B (from potatoes), and vitamin C. (tomatoes). 

It is not a pure vegetable soup since ABC soup is made with either chicken or pig. Additionally, it has a mild flavor that is universal and is not hot, making it a child favorite. As a comfort dish that is wholesome and appropriate for kids, it is common in Cantonese families with children.

Low heat is used to simmer the soup, allowing the flavors of the various Ingredients to gradually meld together. A wonderful hearty, deeply fulfilling soup may be made with only three Ingredients: tomato, carrot, and potato. You may add things like onion and sweet corn to this dish, but I’ll keep it simple.

How ABC soup got its start

The majority of people agree that it came from Malaysia. Since my mother is from Hong Kong and has been making this soup since I was a child, I’m not sure. It was probably developed by Malaysian Chinese, in my opinion.

Not one of those kid-friendly soups made with edible letter noodles, this mouthwatering ABC soup is a Malaysian Chinese-style vegetable soup.

Chinese ABC soup preparation Instructions

Here is how we usually prepare ABC soup at home; almost every family in Malaysia has one.

1. Prepare the meat and veggies.

  1. Thick slices or wedges of tomato should be cut. The skin may be removed at your discretion, but it makes no difference.
  2. The carrots should be peeled before being sliced into wedges or thick, slanted slices.
  3. Peel the potato and chop it into about 1-inch-square slices as well. The potatoes should be submerged in water since they change color when exposed to air.
  4. Slice the onion into large pieces. If not, you may chop it into pieces.

Note:

  • Carrots, tomatoes, potatoes, and some meat make up the foundational components of ABC soup. To make it more healthful, though, practically every household adds onion.
  • The dish may be made using pork ribs, hog bones, chicken drumsticks, or chicken breast meat. I use chicken since it’s healthier, but pig bones would make it taste better. To get rid of the extra animal fat, you may also remove the skin.

2. To make a clear broth, blanch the chicken.

  1. In a big saucepan of boiling water, add the bone-in chicken pieces. 
  2. Re-boil the water, then blanch the chicken for one minute.
  3. Use a fine wire mesh strainer to catch any scum that is floating on the surface. This process aids in producing a clear broth.
  4. So that the finished soup will appear clean and devoid of any chicken detritus, Under running water, wash the chicken.

Note:

  • Even though blanching just takes a few minutes, it has no impact on the chicken’s taste.
  • For sake of simplicity, some home chefs skip this step. Although the soup may seem a bit foggy, the taste will not be affected. To get rid of the unwelcome porky scent, I highly advise blanching the pork if you want to use it in place of the chicken.

3. Mildly simmer the ABC soup.

  • In a slow cooker, add the blanched chicken. Wait until it returns to a boil after adding just enough cold water to cover the chicken, or approximately one liter. For optimal flavor release, let the chicken to simmer gently for 30 minutes.
  • Use a wire mesh strainer to catch any contaminants that are floating on top. The potatoes, tomatoes, onions, and carrots should then be added. 
  • Until the veggies are tender, cover it and simmer it slowly. My slow cooker will need an additional hour, but a gas burner should make it go more quickly.
  • If you’re making it for small children, you may also want to eliminate the white or black peppercorns.
  • Add salt to the soup. 
  • Serve after transferring to a serving dish.

Note: 

  • Instead of a slow cooker, you may alternatively use a stockpot on the stove. The same methods must be followed, but the heat must be adjusted to maintain a low simmer. Additionally, since it evaporates more quickly than in a slow cooker, you may need to add extra water.
  • To make the process simpler, I boil the soup in a slow cooker. I can put all the Ingredients into the slow cooker and let it boil for four hours without fearing that it would dry out since the slow cooker will automatically set at a minimal boiling temperature. The slow cooker comes highly recommended since you don’t have to be concerned with monitoring the heat. If you want to save time, you may also use a pressure cooker.
  • To make the soup more healthy and tasty, always use bone-in chicken or pig.
  • The secret to keeping the meat tender and avoiding the veggies from being too mushy and dissolving is to reduce the heat just enough to maintain a steady boil. High heat, on the other hand, will render the soup’s meat tough.
  • The taste of the soup may be improved by adding MSG or other flavorings, such as store-bought chicken stock or bouillon, but I do not advise doing so since this soup should be nutritious and wholesome.
  • To make the soup healthier, remove the chicken pieces’ skin. (Lower oil)

The soup is really easy to cook and has all the vitamins, protein, and veggies you could possibly need. The Chinese will serve it with steamed rice and it may be a meal on its own.

Optional Ingredients for this ABC soup recipe

There are variations to the recipe. There are several methods to make it, and each family has a unique recipe. Here are a few ideas:

  • the meatless variant. To make it more tasty, I would advise beginning with vegetable broth rather than water. Another option is to double the onion and add some sweet corn and celery.
  • Use anchovies or pork. Instead of chicken or a mixture of both, you may use pork or anchovies. The ABC soup recipe has several uses. If you want to prepare it for small children, for instance, you may eliminate the black peppercorn.
  • Other recommendations. A few dried cuttlefish may greatly improve the flavor. Red dates and a few goji berries are optional in some families, but I would leave them out to emphasize the flavors of the carrot, tomato, and potato. Any more Ingredients from the leftovers may now be added.

1. Can I put the soup in the fridge?

The ABC soup may be stored in a refrigerator for a few days in an airtight container. Then, when you’re ready to serve, add more water and gradually simmer the mixture over low heat until it boils.

2. Should the soup be boiled twice for better results?

The double-boil procedure improves the taste of this healthy soup. If you want to feed your visitor or for other important events, I would advise doing this. It is more practical to cook it over the stove at a low simmer, which is closer to a double boil, since it is fast and simple.

3. Which kind of potato should I use?

Potatoes that are waxy or starchy may both be used in the soup. To maintain the soup pure and unclouded, I like to use the less starchy kind, although others may have different tastes.

  8. Serve after transferring to a serving dish.
