Air Fryer Masala Fries

A while back, I posted a recipe for air fryer chicken wings. I decided to make them again, this time flipping the air fryer on its side and frying them in a drizzle of olive oil, garlic, and spices. A few minutes later, I flipped the air fryer back over and plunged the chicken wings into a pan of hot oil. That’s when I made a critical mistake: I did not take photos of my process.

Recently, I received an Air Fryer (to review) and I was delighted with the results – air fried food was nigh on perfect. However, I wanted to step it up a notch and make alternative fries to my regular oven baked fries from scratch. The results were incredible! These fries are so incredibly crisp and have a deliciously deep flavor. I made a double batch because it was so good, and served them up with a spicy dipping sauce.

Masala fries, or Indian pakoras, are a popular street food that’s commonly made with potatoes and green peas.  Typically, they’re battered and deep fried with a spicy green masala sauce and with lots of cilantro and onions.  I wanted to experiment and try to fry the masala spices onto the fries with the air fryer.  They turned out beautifully crispy and light, and with the right amount of spiciness and flavor!  The air fryer makes it easy to deep fry without deep frying oil.  The masala fries with the air fryer were so good I couldn’t stop eating them!. These spicy, tangy Masala Fries are simple to prepare in the air fryer. Serve as a snack or with your favorite burger after dipping in your favorite sauce!

My air fryer is my new best friend. I feel like I’m a little late to the game, having just recently warmed up to it. I’ve been cooking vegetables in my air fryer every night for the last three to four months. It’s simple and fast!

And French Fries are one of my new favorite things to cook in the air fryer! Not your average fries, these Masala Fries are spiced with chaat masala and Kashmiri red chili powder to make them spicy and sour.

Have you ever tried making fries in an air fryer? It’s ridiculously simple, not to mention fast. If you’re wanting fries, let me inform you that they can be made in under 40 minutes. You can flavor them whatever you like, and since they are air fried, they are a bit healthier than conventional fries.

This will be the ideal side for your burgers, such as over Chickpea Burger, this Labor Day weekend. They have crispy borders and a soft interior, making them ideal for dipping in sauce.

The primary component is clearly the potato, and choosing the perfect one is crucial.

Russet potato: When making air fryer French fries, I like to use russet potatoes. They have a low moisture content, making them ideal for fries, and I strongly suggest using them in this recipe.

Olive oil: You don’t need a ton of olive oil here, just a tablespoon & half of it. You can definitely make these without oil, but the oil adds to the flavor of the fries and I don’t recommend skipping it.

I added chaat masala and Kashmiri red chili powder since they are masala fries. To taste, you may also add turmeric, garam masala, or ordinary chili powder. If you don’t want to use spices, season them simply with salt, pepper, and garlic powder.

How to Make Masala Fries in an Air Fryer

1- Thoroughly scrub the potatoes. You can peel the skin if you like, but I don’t since the texture of the fries is better with the skin on. Cut each potato lengthwise into 3/8 inch broad slices using a mandoline slicer.

2- Use a knife instead of a mandoline slicer if you don’t have one.

3- Then, using a knife, cut each of these pieces into thin slices that are 1/4 inch thick and about 4 inches long.

4- Place all of the sliced pieces in a large mixing basin filled with water. Soak them in warm water for 20 minutes.

5- Drain the water using a strainer after 20 minutes.

6- Place all of the slices on a clean kitchen towel to dry.

7- Pat the slices dry completely with a kitchen towel. Meanwhile, preheat your air fryer for 2 minutes at 380 degrees F.

8- Transfer to a mixing bowl and drizzle with 1.5 tablespoons olive oil.

9- Combine 3/4 teaspoon salt, 1/4 teaspoon chaat masala, 1 teaspoon Kashmiri red chili powder, and 1/8 teaspoon black pepper powder in a small mixing bowl. To taste, alter the spice levels.

10- Mix everything together with your fingers until everything is well mixed and all of the slices are thoroughly covered with spice.

11- Arrange the slices in a single layer in the air fryer that has been preheated. You may need to air fry in batches depending on the size of your air fryer. Place the slices in a single layer rather than layering them.

12- Air fried for 20 minutes at 380°F, shaking the air fryer basket once in between. Check after 15 minutes and continue to cook as required. It takes me 20 minutes, but it may take you longer or shorter. If the edges aren’t crispy after 20 minutes, air fried for a few more minutes. Serve immediately after transferring to a serving dish and garnishing with cilantro.

Suggestions for Serving

These masala fries are a tasty snack or appetizer. However, they must be served right away since that is when they are at their finest. With my evening tea, I like nibbling on these. Ketchup, spicy mayonnaise, mustard sauce, or even chutney (why not?!).

Tips & Notes

If you have a mandoline slicer, use it to slice the potatoes into pieces of the same thickness, then cut each piece into 1/4 inch thick slices of approximately 4 inches in length using a knife. This breadth, in my opinion, is ideal for fries. They burn much faster if they are any thinner.

Soak the sliced potatoes in water for 20 minutes: this step is crucial since it removes extra starch, resulting in crispier fries.

After soaking the potatoes, drain the water using a strainer and transfer the sliced potatoes to a clean kitchen towel to dry thoroughly. Completely dry the sliced potatoes.

Leave the potato skin on for texture: You may peel the potato skin if you want, but I suggest leaving it on. The skin adds to the crispiness of the edges.

Air fry in a single layer: you may need to do this in many batches depending on the size of your air fryer. I used an 8-quart air fryer and did two batches.

Season to taste with chaat masala and Kashmiri red chili powder, like I prepared masala fries. You may season them as you like. You can also create cheesy masala fries by adding cheese to the fries and melting them in the broiler.

Cook until the edges of the masala fries are crispy: the overall time it takes to air fry these masala fries may vary depending on the air fryer type you use. It may take anything from 15 to 25 minutes to complete. I cook for 20 minutes, which is ideal for me. Examine the fries’ edges to see whether they are crispy or not. Cook for a few minutes longer if they aren’t crispy.

Keep one batch warm in the oven at 200 degrees while the other cooks: Because air frying is done in batches (depending on the size of the air fryer), you may keep one batch warm in the oven while the other cooks. You may serve them heated at the same time this way.
