Aloo Paratha Recipe

Aloo Paratha is an Indian flatbread filled with a spicy potato filling. Aloo ka parata is not a food, it’s a feeling! You can make a soft and fluffy stuffed aloo paratha or a crispy paratha with a potato filling. Serve with yogurt, pickles or a knob of butter.

What is Aloo Paratha

Aloo paratha is a potato bread filled with a spicy potato onion filling. We love aloo paratha and love to eat it for breakfast, lunch or dinner. Topped with melted butter, it is a delicious and filling North Indian breakfast. This is undoubtedly one of the most popular Indian paratha recipes.

Many people know him by different names: Alu paratha, Aloo paratha, Aalu ka paratha, Potato stuffed paratha, Stuffed potato flatbread are all the same.

Ingredients for the preparation of Aloo Ka Paratha

  • To make the dough : Whole wheat flour, flour, oil, water…
  • To mix: Boiled and peeled potatoes, onions, anardana powder, red chili powder, coriander leaves, salt, ajwain (carrom seed).
  • For cooking: Ghee or oil

How to make Aloo Parata?

The recipe for Aloo ka Paratha that I am sharing with you today is the one that is made in the homes of Punjab. I learned the tips and tricks from my mother to make the best paratha and I do it the traditional way.

The filling I use for the aloo paratha consists of mashed potatoes, chopped red onions, green chillies, herbs and a very small amount of spices, as well as some chopped coriander leaves.

Aloo Parat’s recipe, step by step photos

First, take 2 cups of wheat flour in a bowl, add half a cup of maida and season with salt.

Add a tablespoon of oil and mix until you have the same consistency as the breadcrumbs. Add water to obtain a soft and supple dough.

Knead the dough well with the palm of your hand and let it rest for 30 minutes.

Now divide the dough into equal parts and roll them out like this.

Set aside, prepare the filling now. For garnish, take a bowl and add boiled potatoes, freshly chopped onions and ginger. Then add ajwain, dried pomegranate, salt, red chili powder and coriander leaves and mix well.

Then roll the dough in the palm of your hands into round balls and place the filling on top. Gradually lift the edges and return to the center to form a round ball again.

Sprinkle the flour-filled ball again and carefully roll it out into a circle about 15 cm in diameter. Place the paratha on the pan or tawa.

Brush it with a little ghee, form it into a paratha and serve it hot.

Can you prepare aloo parata without oil?

It all depends on how you prepare the stuffed parathas. If you use less oil while shallow frying the aallu ka paratha, it will automatically become much healthier. You can also prepare paratha without oil or ghee, but crush it a little to make it healthier.

How do you distribute the filling of the parathas evenly?

Usually when preparing stuffed paratha, there are problems with the even distribution of the filling. Often the filling is moved to a corner and there is no filling left in the middle.

The correct way to prepare parata

The key to golden, crispy parathas is to keep the tawa/pana on a medium to low heat. Always press the paratha gently with a spatula or spoon to cook the stuffed paratha evenly.

Standby without bow

You can make it with onions or omit the parath without onions altogether and make aloo parath without onions. The recipe is the same, but I didn’t add chopped onions to the mixture.

Stuffed parathas are healthy and a complete meal in themselves. Paratha Alu is in fact rich in carbohydrates, making it a very filling dish.

Save perat balances

You can preserve the leftover paratha by wrapping it in a kitchen towel and then placing it in a warming box if you want to eat it the same day.

To store aloo paratha in the refrigerator, you can put it in a refrigerator cup that is large enough and safe enough to avoid stacking.

You can make your own frozen aloo paratha at home and freeze it in the plate and keep these frozen parathas in the freezer for up to 6-8 weeks.

Instructions

(How to make soft dough)

  • In a bowl, take 2 cups of wheat flour, add half a cup of maida, and season with salt.

  • Add water to make a soft, smooth paste. Knead the dough with the palm of your hand for 2-3 minutes, as this will not only loosen the candy, but also make the dough soft.
  • Knead the dough for another 6-7 minutes before rolling it out for parathas.
  • The texture of the dough must be very elastic, otherwise the parathas will not become soft.

  • Now take the bowl for the filling of the aloo paratha.
  • Add cooked potatoes. Mix them well.
  • Then add chopped fresh onion, ajwain, anardana powder, salt and red chili powder. Add the chopped coriander leaves and mix the ingredients together.
  • Keep them away. To prepare the filling for the aloo paratha, remove the onion and mix the other ingredients.

  • Now divide the dough into 4-5 pieces and form round balls in the palm of your hands.
  • Now dust these balls with dry flour and form them into a 5-6 inch circle with a rolling pin.
  • When you have made the circle, add the potato filling. Gradually lift the edges and return to the center to form a round ball again.
  • Now dust this flour-filled ball again and carefully roll it into a circle about 15 cm in diameter.
  • Heat a pan or tawa and spread a small amount of ghee on it.
  • Carefully place the paratha on the tawa and bake it on its side. Fry the paratha until brown.
  • Serve the paratha warm with homemade butter and spicy mint chutney.

Notes and tips for recipes

  • If the filling of the paratha contains moisture and is watery, the filling will escape from the paratha.
  • Add the salt just before you prepare the paratha, as salt makes the filling watery.
  • The key to a flawless, tasty and sweeter aloo paratha is to mash the potatoes well. You can use a blender or grater to puree.
  • The most common ingredients used to stuff potatoes with spices other than boiled potatoes are green chilies, coriander leaves, red chili powder, pomegranate seeds and small amounts of carom seeds,
