Vietnamese mung bean rice is a delicious dessert that cannot be denied. It is a combination of glutinous rice and pieces of mung bean mixed together. I know there are differences between coconut milk and coconut cream, but I always use the blue jar, which is coconut milk. If you haven’t read my post on how to find your way around an Asian grocery store, you know that brands are recognized by logos and packaging labels.

You’ve probably never seen a row with so many packages of beans and their varieties before entering the bean section of an Asian store. Here’s a package to look at:

Pandanus leafs

If you live in the Midwest, finding fresh pandanus leaves will be a challenge. I recommend that you buy the pandanus leaves in the frozen section. For this recipe, you’re putting it in the rice cooker anyway, so it shouldn’t affect the taste.

Toasted sesame seeds

You can find sesame seeds in bulk in Asian grocery stores. Moreover, they can be purchased at a fairly low price.

Tips and tricks for cooking Xoi Dau Xanh

A rice cooker is ideal for preparing this recipe. If you don’t have one, I recommend bringing the mixture to a boil and then turning the heat down low to simmer for at least 15-18 minutes.   word-image-8119

How to prepare authentic Vietnamese sticky rice from mung beans?

Ingredients for mung bean glutinous rice

  • 1 cup mung beans
  • 2 cups sticky rice
  • 1 tablespoon vegetable oil
  • 1 can of coconut milk (13.5 oz)
  • 4 sheets p p p
  • 1 tablespoon of sugar
  • 2 Esslöffel geröstete Sesame
  • ¼ Tasse geröstete Erdnüsse

Instructions for the preparation of Vietnamese mung bean glutinous rice

  1. Soak the mung beans and sticky rice in separate bowls for at least an hour.
  2. After an hour, drain and dry the mung beans and rice. Mix the two ingredients in a bowl with your hands.
  3. Place pandanus leaves on the bottom of the pan to cook the rice. Pour the mung bean and rice mixture on top.
  4. In another bowl, mix the can of coconut milk, vegetable oil and salt. Mix everything together and pour over the mung bean and rice mixture.
  5. Cook the rice in the rice cooker according to the settings on the appliance.
  6. For the topping, grind the sugar, sesame seeds and peanuts in a food processor or mortar.

  1. Then add the vegetable oil and sugar to the mixture of mung beans and glutinous rice.
  2. When the rice is cooked, transfer it to a serving bowl and sprinkle with sugar, sesame seeds and peanut topping.

Preservation of mung bean glutinous rice

It is recommended to keep sticky rice in the refrigerator for up to 3 days. Heat the glutinous rice in the microwave for 20 seconds for the next serving. If the sticky rice is served with mung beans after 3 days, the sticky rice may dry out.   word-image-8121
