What is green chutney?

Green chutney is a kind of Indian pesto or sauce based on coriander/cilantro and fresh mint leaves. It is mainly used as a spice in various dishes. There are many variations of green chutney, and most households and establishments have their own recipe for green chutney.

I also make variations depending on what I plan to serve with this chutney. Specify some options in the Notes section of the recipe. But on the recipe card, I suggest this green chutney for the sandwich and pakoras.

Also known as Khari Chutney, this dish is one of the most popular Indian hot sauces. Think of it as the Indian version of chimichurri or cilantro pesto. But there’s no butter or cheese.

How to use this green chutney

You can use this green chutney as a sandwich spread. You can also use it as a sauce for samosas, pakoras, cutlets, fried entrees, idli, dosa, kebab or as a topping for dishes. I always have a big jar of green chutney in the fridge and we use it throughout the week. With meals, snacks and sandwiches.

I’ve used the same green chutney in a few recipes I’ve shared before.

Chutney wale aloo, Indian egg masala sandwich, paneer sandwich, stuffed paneer pakora, bread pakora, etc.

Ingredients for green chutney

Coriander leaf: Fresh coriander or coriander leaves

Minty leaves: The mint leaves add a lot of fresh flavor. Take half of the cilantro leaves you are using.

Lemon juice: To give the chutney a perfectly tangy flavor. If lemon is not available, lime juice can be used.

Salt: To taste.

Sugar: to balance the acidity of the lemon juice.

Green chillies: 3-4 green chillies, you can use less or more depending on your taste and preference. Use chili with a little spice in the green chutney. For this recipe, it is best to use serrano peppers or small bell peppers.

Peanuts: To give the chutney a smooth texture. If you want to make this dish without nuts, you can replace the peanuts with roasted chana dal, also known as chutney dal.

Chaat Masala: optional, if you like a little spicy you can add it, otherwise not. I don’t usually add chaat masala.

Ginger: It gives the chutney a fresh and pleasant aroma.

Ice cubes: A few crushed ice cubes help preserve the green color of the chutney.

Other variations of green chutney

There are many variations of green chutney, and every household has its own way of preparing it.

  1. Some people add a slice of bread for a softer texture.
  2. Some people like to add grated coconut. This gives it a different texture and flavor.
  3. Some people add a small piece of onion or shallot and garlic to the green chutney. This variety is mainly served as a side dish with main dishes.
  4. You can add crushed papad or a few tablespoons of bhujii for a spicier taste.

You can use any green chutney you like.

Formulation notes: Tips for making the best green chutney

  • Use fresh leafy vegetables for the best taste.
  • You can adjust the amount of chili to suit your taste. If you like a less spicy flavor, use milder varieties of green chilies. If you like a spicy chutney, add small green chillies, which have a stronger heat and a spicier taste.
  • You can use raw green mango after peeling instead of lemon juice if you want.
  • For the green chutney served with the kabab and tikka, 2-3 tablespoons of fresh curd are added to the chutney. This is how the best dahi pudina chutney is made.

How to keep chutney green for a long time after cutting

A common problem encountered in the beginning is that the chutney turns brown or black after a few minutes of chopping. This is due to oxidation caused by heating during the grinding process. Leafy vegetables contain iron, which is oxidized by the heat released from chopping and turns brown.

To get the bright green color of the green chutney, add a few ice cubes while chopping. This prevents oxidation and the green chutney remains bright green.

How to serve green chutney

You can serve this coriander chutney with various dishes.

  • As a garnish: Sandwiches, dosa, tacos, kati roll, etc.
  • Dressing: For deep fried snacks like pakora, samosa, idli, kebab, etc.
  • Trim: It can be used to make aloo tikki, chaat, dahi wada, dahi pakodi, samosa chaat bel puri etc. You can also pour it over tikka paneer and tikka cauliflower or over grilled vegetables like chimichurri.
  • As a garnish for dishes, how to serve cucumbers, etc.

Storage

If stored properly in a glass jar, it will keep in the refrigerator for 5 to 6 days. I usually store it in small disposable bottles. If we need to, we take out a container, use it and that’s it. This allows the remaining chutney to be stored in the refrigerator and extends the shelf life of the coriander-mint chutney.

It can be stored in a freezer box for up to 12-13 weeks. You can also freeze it in an ice cube tray and take out 1 or 2 cubes as needed, thaw and use.
