Alcoholic noodles may sound pretty depraved, but it’s not what the man in this house called girlfriend revenge – a dish served spicy enough to punish a man (or worse, a husband) for the temptation to come home drunk. (Not a bad idea, mind you).

Alcoholic noodles are called Pad Kee Mao in Thai, or toast for those who like alcohol too much. The name has nothing to do with revenge cuisine, but rather the idea of cracking people up with friends enjoying a few drinks.

Since Thais are sociable people who like to have a drink or three at social gatherings, Pad Ki Mao originated as a quick, semi-dry and rather hearty fried dish made with ingredients that are hung on the spot to be eaten while drinking.

So this becomes a kind of do-it-yourself pasta dish that you can use to make any pasta dish. It will be spicy, so if you want non-spicy broad noodles, try Red Na.

The only requirement for alcoholic noodles is that the dish must be really spicy (which doesn’t prevent you from tempering it by lowering the chili level), semi-dry, and must meet the requirements of Thai cuisine in terms of taste, beauty, pleasant aromas, and balance.

So now you understand that the exact ingredients are not specific and that there are as many different recipes for this dish as there are people with different amounts of ingredients in their refrigerator and pantry.

Pad Kee Mao is a Thai stir-fry noodle dish with a varied ingredient list and is prepared in a semi-dry and spicy manner.

Reduced to the essentials, it contains fried noodles, proteins, vegetables like kale or Chinese broccoli, herbs and plenty of spices for a balanced but deep flavor profile.

How many calories are in Pad Ki Mao?

This is where the calories of alcoholic noodles or Pad Ki Mao come from.

Most of the calories come from the instant noodles and a protein source.

If you want to reduce calories, it’s easiest to omit the pasta, which has about twice as many calories as the protein in this dish.

It’s useless to give a number for the number of calories in a dish, as it depends greatly on the pasta and meat you use, the fat content, etc. A generous serving contains about 7 to 800 calories, with a large margin of error.

Drunken Noodles vs Pad See Ew – Pad See Ew is a dish in which wide rice noodles (recipe here) are cooked with dark soy sauce, which has a strong flavor and gives the dish its name. This is a succulent stir-fry dish without chilli (which is added later), while the boozy noodles are quite spicy.

Drunken Noodles or Pad Thai – Pad Thai is a mildly spiced dish, while Drunken Noodles or Pad Kee Mao are very spicy and drier. Pad Thai contains nuts, which also influence the taste and make it very different.

So, if you love Thai food but aren’t a fan of hot peppers, Pad Thai or Pad See Ew will suit you better – you can add chili to it to suit your taste.

What are the noodles for Pad Ki Mao?

You can use almost any regular pasta for this recipe. There are many different recipes, as this is a dish you make with what you have on hand, keeping the chilli high for the spice, keeping the cooking method semi-dry and using lots of spices to taste.

Another necessary element is a good balance of sweet, sour and salty flavours, as well as cooked food with less emphasis on sweet and more on salt – this is what helps people drink more, and why crisps, peanuts and salted potatoes are served in bars and cafes.

So you can use flat and wide rice noodles, Pad Thai style noodles, Japanese noodles, instant noodles like Mama, a popular Thai brand, but the brand is not important here. You can use spaghetti or pasta. Each gives a slightly different taste and texture.

How to prepare alcoholic noodles step by step

A guide to each step with clues as to why we do what we do.

Step 1 – Vegetable preparation

If you’re using kale or Chinese broccoli or something similar, you want it to offer two things other than being a delicious vegetable. They are meant to add color to the dish and a little crunch with their tougher stems.

We can improve the color by blanching them in hot water for a minute, but we don’t want the stalks to get too hard. Therefore, cut off all the hard parts of the stems and leave the younger, softer parts of the stems.

Cutting and preparation of vegetables

Cut the rest of the vegetables into well-formed pieces. I like to cut corn in half and sometimes diagonally. You have a lot of freedom to allow your creativity to express itself.

Remove the hard sting from the kaffir leaves, and I like to scrape the bark from the fingerroot or ginger – this adds to the flavor and aroma.

Roughly chop the basil leaves and add them at the end of the cooking time.

Finely chop the chilli, garlic and yellow chilli in a mortar and pestle or, if you don’t have one, use a rolling pin or mini blender to quickly chop something up – coarsely! Red pepper to dye, not to crush, but to add later for effect.

Step 2 – Bleaching

Blanching the vegetables brings out the colour better and makes the dish more appetising.

If the stems of the vegetables are tougher than you would like, put them in the blanching liquid before the rest of the leaves and cook for an extra minute or two to make them even more tender.

If you use seafood, blanch it too to reduce the smell and give it a fresher, cleaner taste.

If you use meat, you can also blanch it, which will reduce impurities and strong odors and generally make the flavor cleaner and more pleasing. Since you already have boiling water, you can do this.

Blanch vegetables before meat or seafood and you can use the same water.

Step 3 – Cook the noodles

If you are using dry pasta, cook it to about 80% doneness. Follow the directions on the package and whisk them for a minute or so, so they’re still a little al dente.

Step 4 – Cooking seafood (meat or other protein)

Use half of the chopped herbs to fry the seafood or egg white you are using. Season with a little fish sauce to add a little salt.

We bake them separately to keep the seafood from overcooking, and the meat to separate it, cook it for a quick final bake to make the final alcoholic paste,

For drunken pasta, fry the seafood or egg white first to enhance the flavor.

Step 5 – Grilling the drunken noodles

Using the remaining chopped herbs, quickly stir in the vegetables. We try to make the vegetables warm and cook them just a little, rather than cooking them whole and losing their crunchy texture.

Add the nearly cooked noodles, seafood or meat you partially cooked earlier and season with oyster sauce, golden mountain sauce, and add green peppercorns (if using) and kaffir lime leaves and cook for a few seconds.

At the end of stir-frying, add the basil and grill for a few seconds until shrunk.

As with all Thai dishes, you need to taste and adjust the spices to achieve a balance. In this case, the balance is light in sweetness and acidity, but heavy in spice and umami.

Just before the puff pastry runs out, add the coarsely chopped basil and stir until it begins to flake.

Serve immediately.

Drunken Seafood Noodles (Instant) – Pad Ki Mao Mama

There are some basic requirements for this popular spicy, semi-dry Thai noodle dish, but no other recipe. This recipe uses seafood, but you can substitute the protein of your choice by following the same steps. It should be spicy, semi-dry, contain basil and be seasoned with soy sauce and oyster sauce. You can also change the ingredients to suit your taste. This requires the most protein – usually seafood, pork, beef and chicken. It is usually accompanied by noodles, often wide noodles, but pad Thai style noodles and other types like ba mee are also common. The type of pasta changes the texture and taste of the dish, but there is no right or wrong pasta. This dish is for you! Mom’s dry curly noodles, they are very cheap and available everywhere. Pad Kee Mao is often cooked with mama noodles, as they can be found in every Thai household. In our recipe, we try to create a nice contrast in texture with more ordinary ingredients.

Note 1 – instant noodles can be any kind, for example B. Thai noodles, Japanese noodles, egg noodles, flat white noodles, spaghetti, etc.
Note 2 – Ginger is a long version of ginger with a slightly different flavor – you can easily substitute ginger if it is not available in your area.
