Bhagar – Barnyard Millet Recipe

This is a simple recipe for cooking Barnyard Millet. It’s easy to cook, can be served with Indian or Continental dishes and goes well with spicy curries too.

Bhagar is a traditional Indian dish that originated in the northern regions of India and Pakistan. The ingredients for bhagar are typically millet, spices, ghee (clarified butter), tomatoes and onion; all mixed together with salt to taste.The ancient and true way to cook this grain is by using a traditional Indian clay pot. This dish, called Bhagar or Barnyard Millet, can be cooked in an average size pressure cooker for about 45 minutes on low heat. Bhagar, also known as sama ke chawal or samak ke chawal, is a full and nutritious grain that is traditionally eaten during vrat, or Hindu fasting. I’m going to show you a simple millet dish that’s gluten-free and works well as a rice substitute.

What is the meaning of Bhagar? 

Barnyard millet is the English name for Bhagar. Bhagar is the Maharashtra name for barnyard millet. Sama ke chawal, Samak, Samvat, vari, varai, variche tandul, vrat ke chawal, mordhan, or moriyo are some of the other names for this dish. In various languages, barnyard millet is known by a variety of names. 

Bhagar Cooking Techniques

Many barnyard millet dishes may be made not just for fasting but also for other purposes. It’s a nutrient-dense grain with a pleasant flavor. I often prepare millet pulao, millet khichdi, millet Upma, and sweet dishes like as kheer, phirni, and other millet-based foods. In most meals, barnyard millet works well as a substitute for rice.

Barnard millets may also be used to make Idli, dosa, and dhokla. All of these foods are suitable for fasting and are generally healthful.

Bhagar ke chawal or Sama ke chawal – This recipe calls for organic barnyard millet. It may be found in any Indian grocery shop or in the Indian grocery section of the internet.

Ghee – ghee is the finest way to cook millets. Use non-refined oil instead of ghee if you don’t want to use ghee or want to make it vegan. 

Potatoes — Because potatoes are permitted on fasting days, you may add them or leave them out if you’re trying to limit your carb intake.

Green Chilies – They offer a little spice and flavor to the dish.

Peanuts: For crunch and healthy fats. It keeps you satiated for a longer period of time. 

Cumin seeds, curry leaves, rock salt (sendha namak), and cilantro or coriander leaves are among the spices and seasonings used.

Barnyard Millet Cooking Instructions 

One cup of Bhagar should be well rinsed in water. Set it aside for now.

In a skillet with 1 tablespoon ghee, toast cumin seeds, curry leaves, and green chilies.

Allow the cumin seeds to sputter, and the green chilies will blister somewhat. 

Cook until the potatoes are cooked, then add the medium diced potatoes. It will take a few minutes to complete this task.

Sauté for a few minutes after adding washed and drained barnyard millet or Bhagat.

Mix in 2.5 cups of water and a pinch of rock salt. Mix well, cover, and turn the heat down to low.

Cook the millets for 7-8 minutes over low heat, or until all the water has been absorbed and the Bhagat has turned fluffy.

Your millet pulao or khichdi has finished cooking. Garnish with chopped coriander and roasted peanuts.

Barnyard Millet Can Be Prepared in a Variety of Ways

This is a recipe for dry Bhagar or varicha Bhaat. Add extra water and simmer for a few minutes more for a Khichdi consistency. 

Notes on the Recipe and Expert Advice

  • I used just potatoes in my Vrat wale sama ke chawal dish. If you’re not fasting, though, you may add additional veggies like beans, peas, carrots, and so on. This will provide a significant amount of nourishment.
  • If you want it to be hotter, you may add all of the spices that are allowed in fasting dishes.
  • This dish benefits greatly from the addition of ghee. I recommend cooking this with ghee. If you don’t want to use ghee, you may use cold-pressed peanut oil. In my cooking, I try to stay away from processed oils. 
  • I made variche bhaat in a pan, but if you want to use a pressure cooker or Instant Pot, you can absolutely make Bhagar in one. The main difference is that cooking barnyard millet for 3-4 minutes after pressure building takes a lot less time in a pressure cooker. 

What Should You Serve with Bhagar?

Serve this spicy Maharashtrian Barnyard Millet Pulao with plain yogurt or cucumber raita and Vrat vale aloo on fasting days. In Maharashtra, this Variche tandul is traditionally offered during fasts. For a nutritious supper on non-fasting days, serve it with any dal of your choosing, such as dal fry, sabut masoor, or sabut moong.

Ingredients

  • 1 cup millet (barnyard) Sama ke chawal or Bhagar ke chawal
  • 1 tblsp. butter
  • Potatoes, 200 grams
  • 2 chiles verdes
  • 2 tbsp peanut butter
  • 1 teaspoon seeds of cumin
  • curry leaves (ten)
  • 12 teaspoon sendha namak (rock salt)
