Bombay Chutney for Dosa
Bombay chutney is a sauce dish served as an accompaniment to breakfast dishes like dosa, idli, puri, chapati and roti. It is popular in the south, particularly in Andhra Pradesh and Tamil Nadu. Go to any roadside tiffin center in a small town, and you’re sure to find Chutney Bombberry on their menu. It is an old recipe in many Telugu families. My grandmother used to serve this gluten free chutney with the food and dosa’s of the poor.
It is essentially a Maharashtrian recipe, pitla (pitla/pitla), adapted to the palate of South India. Pitla is a thick osan-based sauce served with roasted bhakri and is a staple of Maharashtrian cuisine. Since chutney or pachadi is a regular part of the tiffins of South India, the pitla may have been named Bombay Chutney, a dish with a finer sauce. That’s what I think. Can someone explain to me how the name Chutney Bombay came about?
Bombay Chutney Andhra Style
Several Indian dishes are versatile and one of them is the Chutney Bombey. There are several variations on the basic Bombay Chutney recipe, and simply changing the temperature slightly or adding onions, tomatoes or potatoes changes the flavor profile. At home we make three or four variations, served with different tiffins. Bombay potato chutney or Bombay aloo chutney goes well with peeled potatoes, chapati and roti. The other version without the onion goes well with the idli. The tomato and onion option goes well with the dosa and cleans, while the cottage cheese option adds a tasty edge to the cleansing. I will present all versions in the following articles. Today I am sharing an andhra style chutney with tomatoes and onions.
