Cantonese chicken pot soup with peanuts, herbs and red dates.

Chicken thighs are very popular in China, they are the most expensive part of a whole chicken. The most popular way to eat chicken drumsticks is with soy sauce, which makes an excellent appetizer and side dish. Or I guess you’ve tried braised chicken feet in Cantonese dim sum restaurants.

They also hate chicken feet, mainly because chicken feet taste stinky and the meat is hard to separate from the bones. However, chicken thighs contain a lot of collagen, which helps to thicken the soup. It is therefore one of the best ingredients for the offer.

A few tips for a delicious chicken pot soup.

  1. Use a regular pot, without a pressure cooker, to make soup or chicken stock. In this way, the odor can be eliminated through continuous steam.
  2. Use a large piece of ginger and a green onion to eliminate odors.
  3. Secondary ingredients such as peanuts, red dates and other spices can add a natural sweetness and flavor to the broth.

Instructions

Place the ginger, green onion and Szechuan corn in a large pot of water and simmer. Cook the chicken legs 2 minutes after the water has boiled, stir and wash under hot water.

In a pan, add chicken legs, lean meat, chopped ginger, dried red dates, longan, goji berries, dried sweet potatoes and tangeng. Add 4 litres of water. Bring to a boil and increase heat for 10 minutes, then cover and simmer for another 30 minutes.
