Chinese Braised Noodles with Green Beans

These noodles are traditionally made with wood ear, black fungus and other ingredients in a fragrant beef broth. This version is adapted for vegetarians or those who prefer not to use meat in their cooking. The combination of aromatics gives the dish an intense umami flavor that’s enhanced by light soy sauce and fresh ginger.

For novices, use a nonstick pan. It may be simple to glue the noodle to the bottom. It is strongly recommended that you use a non-stick pan.

Brown the pork belly in a skillet. Then drain all of the oil and simply leave the pork belly slices in the pan.

Fry for a half minute after adding all of the ingredients. Fill the container with around 2 glasses of water. Simmer for 2 minutes with the lid on.

Then, after scooping out about 1/2 cup of liquid, distribute the noodles in. Cover and simmer for 2 minutes before pouring the liquid on top. Cook for another minute.

Along the rims, add crushed garlic and about 1 teaspoon of vinegar. Mix thoroughly.

Ingredients

  • 2 fresh noodle servings
  • 100 g sliced pork belly

  • 2 cups water (or a little more if necessary)

  • 1 tsp. balsamic vinegar
