Chinese Cucumber Salad–Smashed Version |

A strong, juicy cucumber will give you a wonderfully refreshing taste. In this recipe, the cucumber is crushed with the help of a food processor. The presentation is beautiful too, and the taste is full of goodness. This dish will make you go wow with your guests and the best part is, it is very easy to prepare.

I am not sure where I first heard this recipe but I think it was at a picnic at the park.  Well, the first time I saw it I knew it would be perfect for a salad.  When I saw it at a picnic I thought it was a perfect appetizer.  When I saw it at a picnic I thought it was so elegant.  When I saw it at a picnic I thought it was so delicious.  The only thing I didn’t realize was that I would find myself making it again and again.

Smashed cucumber salad with garlic, vinegar, and sesame oil in Chinese style. This is one of China’s most popular handmade cold meals, and it just takes 5 minutes from start to finish.



Cucumber is a fantastic summer vegetable. The cold, crisp flavor may help us stay cool in hot weather. In China, there are numerous cold meals that are similar to salads from previous centuries, such as Chinese cabbage salad, cucumber salads, and spicy chicken salad.

Elaine usually makes simple Chinese cucumber salad in one of two ways: one is to crush the cucumber slices immediately before combining, and the other is to pickle the cucumber slices for 1 or 2 hours. As a consequence of the smashed cucumber’s ability to absorb more sauce inside the cucumber, it has a complex and homogeneous flavor. Pickled cucumber salad, on the other hand, has two distinct flavors. The first is the mixed sauce, which is complemented by the crispiness and freshness of cucumber slices. If you like cucumber salad as much as I do, I strongly advise you to try it both ways. Here’s a picture of a spicy pickled cucumber salad.


Pick fresh cucumbers and peel off the thick skins, leaving some thin skins on the crushed cucumber to give some additional green color and crispness. You can take them all off if you truly don’t like the skin. Remember to snip off the two ends. Alternatively, if using organic tiny cucumbers, leave the skins on and simply cut off the two ends.

Cut the cucumber into tiny pieces after smashing it.

Then, before cutting, prepare the garlic by smashing the garlic cloves.

The salad should then be seasoned with salt and sesame oil.

Add more light soy sauce and black vinegar if desired.

Add 1 to 2 teaspoons chile oil for a spicier version. Before serving, thoroughly combine all ingredients.

  • 350g 1 fresh English cucumber (or two smaller ones)
  • 3 garlic cloves, peeled and crushed before being cut
  • a quarter teaspoon of sugar
  • season with salt to taste
  • sesame oil, 1 tbsp.
  • Optional: 1 tbsp. light soy sauce
  • Optional: 1 tsp. black vinegar
  • 12 tablespoons chili oil, to taste


  1. Wash the cucumber and remove the rough skins for a long English cucumber. Remove the two ends of a small cucumber.

  2. Smash the cucumber with a broad kitchen knife (such as a Chinese slicing knife) until it is completely smashed. Then cut each item into one bite size pieces.

  3. Put all of the cucumber cubes in a basin. Combine the mashed garlic, salt, and sugar in a mixing bowl.

  4. To create a stronger version, add additional light soy sauce and vinegar.

  5. For a spicier variation, add chili oil.

Notes on the Recipe

You may retain most of the skins on extremely delicate and immature cucumbers.
