The sauce can be made with either soy or oyster sauce, but the original version uses only tomato ketchup mixed together with eggs for an amazing stir fry.

This quick and simple Chinese tomato egg stir fry recipe is ideal for hectic weeknights! It’s a go-to dish for me since I always have all of the ingredients on hand.

It’s created with soft, fluffy scrambled eggs and luscious tomatoes that have been stir-fried in a sweet and flavorful sauce! The best part is that it takes just 10 minutes to prepare and is packed with nutritious protein and fiber thanks to the eggs and tomatoes!

Notes on the Recipe

After making this Chinese tomato egg stir fry innumerable times, these are my best tips:

  • Tomato-to-egg ratio: For optimal results, use a 1:1 tomato-to-egg ratio. 
  • Cook until barely set for nice, fluffy scrambled eggs. When stir-fried with the tomatoes, it will continue to cook.
  • The tomatoes should be cut into big enough pieces so that they don’t break apart when cooked.
  • For the finest taste, use completely ripe tomatoes. You may take the skin off the tomatoes by scoring a ‘x’ on them and boiling them for 30 seconds or until the skin begins to pull back. Place in an ice bath to make removal easier.

  • Tomatoes – For the finest taste, use completely ripened tomatoes, which are inherently sweet. If you want to, you can peel the skin.
  • I used big eggs for this recipe. Use a 1:1 ratio of tomatoes to eggs for the best results.
  • The sauce is made with oyster sauce and soy sauce and has a savory, sweet, umami flavor that pairs well with the tomatoes and eggs.

To prepare Chinese tomato egg stir fry, follow the steps below.

  1. Begin by whisking the eggs together in a mixing basin.
  2. In a nonstick skillet over medium high heat, scramble the eggs. Cook until the eggs are just set and no longer runny. Remove from the equation.
  3. Toss in the tomatoes and cook for 2 minutes, or until softened. Return the eggs to the pan with the sauce and cook for another 2 minutes.
  4. Serve with rice or noodles and green onions as a garnish!

  4. To peel the tomato skin, score a ‘x’ on the tomatoes and boil for 30 seconds or until the skin begins to pull back. Place in an ice bath to make removal easier.
