Clam with Glass Noodles |

My favorite dish from Malaysian restaurants is the Clam Noodle. I love the texture of the noodles, the light but filling flavors the clams give, and the freshness of the seafood. I have tried this dish at restaurants in Malaysia, but I have not seen it in any of the restaurants I have visited in America yet. So I decided to try making this dish myself and took some pictures to share with my readers.

The secret to eating more food and still losing weight is to make sure you are eating more calories than you are expending. This is why losing weight is so hard. People often think it’s just about dieting—going on a diet, eating a few less calories, and seeing the pounds fall off. This is a good start, but it’s not enough. What we need to do is eat more without gaining weight, right? And that’s where “Clam with Glass Noodles” comes in.

If you’re not familiar with clams, these are type of bivalves that are found along the shores of the North Atlantic Ocean and the Mediterranean Sea. They are usually harvested using a clam rake, and are known to be very tasty.

Glass noodles with a garlicky poached clam. Summer is ideal for seafood, as well as clay pot meals. When compared to conventional stir-frying recipes, I prefer to use a clay pot since it takes less time in front of the fire.

Almost any tiny shellfish, such as oysters with garlic sauce, pairs well with a hot garlic sauce. It’s also delicious with noodle dishes and mushrooms, such as steamed enoki mushrooms. The use of mushrooms as the bottom component prevents the noodles from sticking to the bottom, while the glass noodles absorb the flavors from the clam and spices. There are no culinary skills needed, and novices will not fail.

Soak the newly purchased clams in a little amount of salt and oil so they can spew sands.

After that, bring a big saucepan of water to a boil, add the ginger, and cook the clams until they open. This step should not be overcooked. This helps to get rid of the strange flavor.

Add 1/2 tablespoon of oil to the bottom of the claypot (to prevent sticking) and then put golden needle mushroom in the bottom. Then there’s a layer of pre-soaked glass noodles in the center and a layer of blanched clam on top.

3 tablespoons vegetable cooking oil in a small pan, fried garlic, ginger, scallion, and chili peppers until fragrant. Oyster sauce, light soy sauce, salt, sugar, and black pepper are all good additions. Mix thoroughly.

Pour 1 cup of water around the borders of the sauce, then distribute it on top of the clay pot. Heat for a total of 10 minutes.

Ingredients

  • Clams, 500 g
  • Remove the ends from 100 g golden needle mushrooms
  • 100 g glass noodles, soaking
  • 1 quart of water

Sauce

  • 3.5 tablespoons vegetable cooking oil (distributed)
  • 1/2 cup garlic, minced
  • 2 tbsp. ginger, minced
  • 2 tbsp. scallion, minced
  • 2 tbsp soy sauce (mild)
  • 1 tablespoon of oyster sauce
  • 2 tbsp. fresh chili pepper, chopped
  • a quarter teaspoon of salt
  • 1/2 teaspoon of sugar
  • 1 tsp. pepper, ground
