Easy Wonton Noodle Soup Recipe

This simple wonton noodle soup recipe is so much more than the chicken noodle soup you can buy in a can. You know – chicken broth with a few pieces of pasta floating on the bottom.

Add to the long strands of egg noodles some vegetables and a deliciously airy wonton, and lots of spices to suit your taste, and you basically have a soup for a complete small meal. You can even add a few pieces of cooked meat!!!

It is an excellent soup whether you are physically challenged or recovering from an illness because it is easily digestible. Bar Mee Kiev is a classic Thai version of Chinese wonton noodle soup, which is mostly just wonton without the extra noodles and vegetables.

Don’t be fooled by the ingredient list – it’s very easy to make, I promise. If you want to make it even easier, use store-bought chicken stock – it won’t taste as good.

The beauty of Thai wonton noodle soup (Bar Mee Kiev) is that you can spice it up or tone it down, make it spicier or milder, to your own taste.

What are wonton wraps and egg noodles?

Both are mixed from soft wheat or rice flour, salt, eggs and a little water and formed. Wonton papers are rolled into sheets and cut into small squares or other shapes. The dough is the same dough that is pressed into long pieces.

It is the Asian version of noodle sheets (lasagna) and spaghetti.

What is the difference between noodles and Asian noodles?

Italian pasta is traditionally made from durum wheat flour, which is a ground semolina and is much coarser than softer wheat and rice flours.

The coarser hard wheat is processed with a minimum of salt into a thick dough that is rolled or extruded and has a moderately soft exterior when baked, but a slightly caustic interior.

Asian noodles are made with finer wheat or plain rice flour, creating a finer paste. Salt is used to break down the gluten, resulting in a much softer final product with no bite.

How to make a wonton filling

The filling of our wontons is very flexible.

You can use chicken, crab/shrimp, pork or any other protein and season to taste.

All you have to do is finely chop the meat you are using. You can also use a food processor for this, or just be handy with a knife.

Also chop added vegetables, such as. B. the green onions I use or other onions, very good. If you are using crab/shrimp, I prefer to chop them up a bit more, but still small enough – just enough to give flavor and a little bite when you eat them.

Add decoration and moisten the corners.

Mix the chopped ingredients and season with soy sauce and oyster sauce – again, you can switch to mushroom sauce or even Worcestershire sauce if needed.

Add a little salt, pepper and other spices, mix well, cover and refrigerate for a few hours or better yet overnight.

That’s it!

Fold the corners of the wonton packet to make a packet.

How to make chicken stock

I probably don’t need to tell you how to make chicken stock, because it’s so easy.

If you need convincing how easy it is to put a chicken carcass in a pan, add herbs and spices and cover with water. The addition of radishes is a nice touch, and you can add other vegetables as well.

There are many variations on the ingredients, and you can hardly go wrong if you don’t overdo it and add salt – you can do that later.

Bring to a boil and simmer for about 20-30 minutes. My ingredients list gives you a good base, but feel free to experiment. I find the star anise and goji berries very tasty and flavorful.

Plus, goji berries are known in Chinese circles for their health benefits!

Preparation of wonton and noodles

For egg noodles, just tear them open and shake off the flour so they don’t stick when fresh. Now they’re ready. They said it was easy!

To make the wontons, take one of the wrappers, put a little of the egg white mixture you made earlier on it, dab the edges with a little water to bind them together, and fold them into the shape.

You can make semi-circular, triangular, rectangular and even playful shapes after folding them into bundles to make small hat shapes.

But don’t stress about the shapes, because with them you can still relax the cooking a bit.

You can add a little flavor by poking the sides with a fork if you like – a bit like a crust pattern.

Steps to make wonton flowers.

You will need to blanch the wonton and egg noodles, as well as prepare the bok choy and bean sprouts. It is much better to use chicken broth for this recipe, although you can also use hot water if you wish.

Or use a bouillon cube to make a lower quality broth for boiling and blanching.

You must separate this broth from the broth you will use for the soup, because even though you can brush the flour off the noodles, some will remain and cloud the soup.

It is best to heat the bok choy, bean sprouts and all other vegetables first by dipping them into the blanching broth and blanching for a few minutes. Then do the same with the egg noodles (bar along) – again, just a minute or two.

Add the egg noodles and vegetables before the soup.

Finally, take your wonton and place it in the blanching broth for 3-5 minutes, depending on the ingredients of the filling – remember exactly which filling is hidden and needs to be cooked.

Put the egg noodles in a serving bowl, followed by the bean sprouts, cooked wontons, bok choy, and finally pour in the broth with the hot soup.

After the egg noodles and wonton, add the soup broth.

Serve with condiments such as dried chili flakes, chopped chili shoots in vinegar (you can mix this for an orange version or just chopped chili shoots in white vinegar), crispy onions, sugar and chili oil.

Quick tip – Make an extra wonton to use up the wonton wrappers – put the wontons you don’t need on a tray and freeze them, once frozen put them in zip lock bags for the freezer. You can also freeze the excess soup stock. If time is short, an instant lunch will be waiting for you.

Ingredients for filling wontons

  • 1 packet wonton
  • 4 egg noodles
  • 8 ounces ground chicken
  • 4 oz. chopped shrimp
  • 1/4 cup hacked Fr├╝hlingszwiebelspitzen
  • 1 tablespoon soy sauce
  • 1 1/2 tablespoons oyster sauce
  • 1 brown sugar
  • 1 horn root horn ha ha ha
  • 2 cloves of garlic, finely chopped
  • 1/2 teaspoon white pepper

  • 1 chicken carcass
  • 4 garlic cloves
  • 2 teaspoons white pepper
  • 1 coriander root
  • 1 gal
  • 1 whole sea of garlic
  • 2 tablespoons. Pickled garlic water
  • 2 Art. Tung Tsai Extra’s soup spoon
  • 1/2 teaspoon. Sea salt
  • 1/4 cup soy sauce
  • 1 tablespoon palm sugar
  • 2 cinnamon sticks
  • 2 star anemones
  • 4 Cardamom
  • 1 Goji-Beer sleeve

  • 2 L pure water
  • 1 rad medium white radish

Wonton stuffing guide

  • Crush the white pepper, coriander root and garlic and mix with the other marinade ingredients. Add the stuffed shrimp and chicken and some chopped green onions. Stir well, then cover and refrigerate for 30 minutes or, better yet, overnight.

Noodle soup instructions

  • Add chicken carcass, crushed galangal, pickled garlic, crushed coriander root, crushed pepper, chopped radish, tang chai, cinnamon, cardamom, star anise, goji berry to the soup pot. Put clean water in the lid.
  • While the soup simmers, turn up the heat and add the soy sauce, palm sugar, candy sugar and salt. Take it easy for 20 to 30 minutes.

Making a wonton

  • Take the wrapping paper and place it on a flat surface. Place a teaspoon of the previously prepared wonton filling in the center of the wonton sheet. Moisten the edges of the foil with a little water and fold the funnel into shape.
  • Press the edges to seal.

Loan and delivery

  • Wontons and noodles should first be cooked in broth, in low-quality stock with a bouillon cube, or in plain water – blanch the vegetables.
  • Simmer in blanching liquid and add vegetables, such as. B. bok choy or bean sprouts, submerge them and stir for a few minutes to warm them completely – you are not trying to cook them completely.
  • After blanching, dip the vegetables in water to prevent them from cooking and stir very gently for a few minutes to cook the filling. Most toppings are ready in about 4-5 minutes.
  • After the wontons are done, take the egg noodles, shake off the excess flour and put them in the blanching water for about two minutes.
  • Arrange all the solid ingredients on a serving platter and make a hot soup with the retained broth.
  • Serve with mixed condiments, pickles and sugar, chili oil and dried chili flakes, which each guest can add to taste.

Can you make Asian noodle soup with noodles?

Pasta is generally made from durum wheat and little salt is used, which would break down the structure of the resistant gluten. So you can use noodles, but they will be thicker in the soup.
