My Christmas baking is getting more exciting and I love the smell that fills my house when I cook. My current obsession is shortbread cookies, and my favorite by far is shortbread with fruit and nuts. The simplest cookies are simply opened and baked. The advantage of this shortbread recipe is its versatility, where you can play with different flavors and z’s. For example, you can add dried fruit, nuts, bark or espresso. The addition of dried fruits such as raisins, dried cranberries and nuts such as pistachios or almonds enhances the classic taste of shortbread and gives it a whole new dimension. And you know what the best part of this shortbread recipe is? It’s egg-free and you can freeze a cube of uncooked dough and prepare it in a jiffy when friends come to visit.
