Hot and Sour Lotus Root Salad

A super crunchy sweet and sour salad with lotus roots.  Lotus root 莲藕 is a very popular ingredient in Chinese cuisine all over the country. It is the rhizome of the lotus plant, a magical vegetable that offers a beautiful view.  The lotus plant is grown in mud, but the very valuable lotus root, lotus seeds and the beautiful lotus flower are used.  Lotus root has gained popularity as a vegetable on the table. Lotus seeds, fresh or dried, can be used to make lotus root paste. It can have several small tubes next to each other.  To facilitate transportation, the small tubes are broken and joined together to form two or three tubes.

These are two different variants, one with 7 holes (7孔莲藕) in diameter and one with 9 holes. The lotus root with 7 holes is better for soup or lotus root powder because it is softer. The 9-hole lotus root (9孔莲藕) is better for chips and salad because it is much crispier. But for the average home kitchen, the two types are interchangeable.

I love all kinds of cold and spicy dishes.  Lotus root is one of the root vegetables that contains moderate calories and vitamins and minerals of rice. It is also an excellent source of fiber. I have many lotus root recipes on the blog, from soup to stir fry dishes.

The most important part of a Chinese hot and cold dish is the red oil. You can follow these instructions for the pepper or these instructions for the short version.

Instructions

Peel the skin off the lotus root and cut it into thin slices. Soak potatoes in plain water for a few minutes to remove excess starch and keep potatoes crisp after cooking.

Bring a pan of water to a boil and add a small pinch of salt. Boil the lotus root slices for 2 minutes. Pour off the water and drain.

Prepare another small pan, add 1 tablespoon of oil and fry the garlic, red pepper rings, green pepper rings and spring onions until fragrant. Add light soy sauce, cumin powder, chili oil, salt, sugar, vinegar, sesame oil and sesame seeds. Mix well. This dressing is from a potato salad I made about a year ago. It has received a lot of positive feedback.

Add the slices of lotus root. If you like cilantro, mix it in as well.
