Ice cream: it’s a summer treat that has the power to make even the sourest grump smile. But how many of us have ever tried Indian Butterscotch Ice Cream? The flavors are slightly different from Western versions – they’re made with milk, instead of cream, and are flavored with cardamom, saffron and rosewater. The result is a dessert that’s both lighter and more refreshing than your typical ice cream cone.

We all love ice cream, but it doesn’t always love us back. Overindulging in this sweet treat can result in bloating, discomfort and even weight gain. However, there is a dessert that is both delicious and nutritious, and can even help you lose weight: Indian Butterscotch Ice Cream. When I first moved to the US, I remember being very excited when I found chips and fudge in the grocery stores, but when I tried it, I realized it wasn’t what I was looking for. Nowadays, I sometimes find Indian toffee essence in Indian grocery stores, but back then I wouldn’t have found it anywhere. I remember buying bottles of essences when I went back to India and taking them with me. I’ve been making this caramel ice cream for years. I remember the first time I did it, Sarvesh was very happy. It’s one of her favorite ice creams, and she missed it a lot here, but not anymore! I’m a big fan of no-bake ice cream, like this Kesar Elaichi ice cream. Of course, they are not as creamy as those made with a custard base and a machine. But look how simple they are! You can literally do the foundation in 10 minutes and the possibilities are endless.

Indian Caramel Ice Cream is a creamy caramel-flavored ice cream and what makes it special is the swirly praline. The chocolates are made of sugar and nuts. The sugar is caramelized, then nuts are added, and after it hardens, it is broken into small pieces and added to the ice cream. Imagine a creamy caramel-flavored ice cream, and when you bite into it, you get pieces of chocolate. It’s the perfect treat for a hot summer day or for an ice cream you crave. We love this recipe because it’s so easy! With just a few ingredients, without an ice cream maker and prepared in less than 30 minutes (not counting freezing time, of course).

Ingredients

It’s a whipped cream-free ice cream that only needs a few ingredients! word-image-10748

  • Thick cream: Heavy cream is the basis for this ice cream without whipped cream. Beware of anything with more than 35% fat. In the US, heavy cream is available in any grocery store. Even in India, heavy cream is more affordable today than it used to be. The Amul cream that we usually buy in India is not a heavy cream, as it has a lower fat content.
  • Sweetened condensed milk : Sweetened condensed milk adds sweetness to ice cream. You can usually find 14 ounce cans of condensed milk at the store, I used 3/4 of a 14 ounce can of condensed milk. If you prefer a sweeter ice cream, you can use the whole glass.
  • Indian caramel essence: You absolutely need Indian caramel essence to make this ice cream. I add Indian because they also sell butterscotch oil in the United States, but it’s not the same thing. I used butterscotch essence from the Viola brand.
  • Milk powder : I like to add a little powdered milk to my ice cream base, but if you don’t have that, that’s fine too. You can leave it out and it will still be delicious.
  • Sugar and nuts: For the preparation of the praline, we need sugar and nuts. I use a mixture of almonds and cashews, but you can also use just cashews.

Step-by-step instructions

Chop the cashew nuts and almonds beforehand and prepare them. 1- Put the sugar in a large saucepan over medium-low heat. Do not stir, the sugar will clump together first. 2- But eventually, it melts completely and becomes smooth. 3- Once the sugar is melted and caramelized (light golden color), add the nuts. Stir in the nuts. Be very careful, the caramelized sugar is very hot. Sugar can also burn very quickly once it’s melted. So once it’s caramelized, add the nuts and remove from heat. 4- Transfer the sugar-nut mixture to baking paper and allow to cool. You can also use a bowl/plate, but make sure it is well greased before pouring in the sugar mixture. Allow it to cool and harden completely. word-image-10750 5- When the sugar-nut mixture is completely firm and hard, break it into several pieces and put them in a food processor. Beat several times until you get a powder with coarse pieces. Don’t make a fine powder, you need big chunks of chocolate for texture. Set the praline aside. 6- Now take the mixing bowl (or the bowl you are going to whip the cream in) and put it in the fridge with the whisk for 20-30 minutes. Then take it out and add the heavy cream. Beat the whipping cream with a whisk or hand mixer until soft peaks form. Set it aside. 7- Put 3/4 of a 14 ounce can of condensed milk, the milk powder and the Indian toffee essence in a large bowl. Mix until everything is well combined. You can add a drop of yellow dye if you like. 8- Now add some of the whipped cream to the condensed milk mixture and mix it slowly with a spatula. word-image-10751 9- Add all the whipped cream to the condensed milk mixture in batches, stirring slowly after each addition. Do not stir too vigorously. 10- Once the whipped cream and condensed milk mixture are well blended, add the prepared chocolates. You can keep some to sprinkle on top just before serving. 11- Stir with a spatula until the praline is well incorporated into the ice cream base. 12- Pour the ice into an ice tray or other container in which you want to freeze the ice. Tips and tricks

  • The caramel ice cream you find in India is light yellow in color, so I added coloring here. It’s totally optional, the ice cream tastes great with or without the color!
  • I only used 75% evaporated milk (3/4 of 14 oz evaporated milk). You might as well add the whole pot. Since we are also adding chocolate, I thought about not adding the whole jar, otherwise the ice cream would be too sweet for my taste.
  • You can also use only cashews for the praline, if you prefer. But don’t skip the cashews.
