Kesar Phirni Recipe

Kesar, or Kesari, is one of the most popular Indian sweets. It is prepared with rice, sugar, khus (saffron), cardamom, pistachios, almonds, pista (pistachio nuts), ghee, and sometimes nuts. The basic taste is quite similar to the Persian drink kesari, which is prepared with wheat, saffron, nuts, and sugar. Here is how to make it at home.

The kesar phirni is a very popular Indian dessert, which is very easy to make. It is a crunchy and crispy rice snack, which is loved by kids and adults. In fact, it is the most favourite breakfast among kids. In this recipe, I have used rice powder and rice flakes to make kesar phirni.

Kesar Phirni Recipe is a dessert recipe for churning out the ever famous kesar (saffron) laddoos. These laddoos are best served on festive occasions like weddings, birthdays, festivals, anniversaries, engagements, etc. It is made by melting the besan (gram flour), sugar, ghee (clarified butter), zafran (saffron) and cardamom seeds in a frying pan. The mixture is then slowly dropped into a pan filled with water or milk. It is then boiled for some time until it reaches the right consistency.

The pudding is very aromatic because of using basmati rice and saffron. 

Firni is usually served in Sikora or matki, tiny clay pots. Because earthy flavors are infused into firni, the flavor is increased. 

This Kashmiri phirni is a breeze to prepare. You just need to follow two basic steps. The first is temperature and time, while the second is ground rice texture. In the step-by-step procedure, I’ll go over both in great detail.

Phirni vs. Rice Kheer: What’s the Difference?

Another dish prepared with comparable components is kheer. They also have a similar appearance. However, the flavor and texture are distinct. Whole rice is used in kheer, whereas ground rice is used in phirni. Both deserts have a distinct texture and mouthfeel as a result of this.

Phirni is typically cold, while kheer may be eaten warm or cold. 

Phirni’s ingredients

Phirni is traditionally prepared using delicious basmati rice. However, you may prepare it with any flavorful white rice. It’s wonderful, and I prepared it with Gobindo Bhog rice.

Milk — For a thick, creamy flavor. To create phirni, use whole milk.

Saffron and Rose Water — For the classic flavor of kesar phirni, you’ll need high grade saffron or kesar. Rosewater is an optional addition. I’m not a big fan of the taste. That is something I don’t do.

Slivered pistachio and saffron water were used to decorate the phirni. It gives a wonderful crunch to phirni that is otherwise smooth.

Sugar – You may sweeten it with normal sugar or jaggery. Depending on the tastes of family members, I utilize any of them. You may use stevia if you are diabetic and want to avoid sugar.

 

The Procedure in Steps

Drain the water after thoroughly washing the rice in plain water.

Allow the rice grains to air dry or blot them dry with a dish towel.

In a dry grinder, grind the rice. Rice should have a grainy texture. It should have the consistency of rava or couscous. Never, ever, ever create a fine powder.

Set aside these grains of rice.

Soak a few strands of saffron in 2-3 teaspoons of water in a small dish. 

In a saucepan, heat one litre of milk until it has reduced to one-fourth of its original volume.

Mix in the ground rice now.

Cook the rice and milk together for 10-12 minutes, or until it thickens and resembles a pudding or custardy consistency.

In between, keep stirring.

Cook for another 3-4 minutes after adding the sugar.

Saffron water and rose water are added (if adding).

Turn off the heat after thoroughly mixing.

Transfer the mixture to a separate bowl and refrigerate it.

Before serving in a bowl, give it a good stir. Pistachio slivers and saffron water for garnish 

Notes on the Recipe

Although some recipes call for soaking saffron in milk, the best method to get the most flavor is to soak it in water. I learnt this from Iranian spice merchants in Dubai’s Spice Souk, who demonstrated it to me using both ways. Soak saffron in water at all times.

Stir the dish constantly, particularly after adding the ground grains. Otherwise, it may form lumps or cling to the bottom of the container. 

To make the phirni more creamy, cook it on low heat.

Phirni is usually served in mitti ke sakore, or clay pots. Clay absorbs additional water to thicken the phirni and imbue it with a delicate fragrance.

Variations of Phirni

Aside from this saffron phirni, Any fruity phirni may be made using fresh fruit puree. Apple firni, mango firni, strawberry firni, and even blueberry firni are all options. However, they aren’t your typical variations.

Saffron and cardamom may be used to make a traditional Phirni. Rose petals, rose water, and gulkand may be used to sweeten instead of sugar for a rose flavor (rose petal jam). Another variation may be made by adding 2-3 drops of kewra water, which has a wonderful flavor.

What Is The Best Way To Store?

It may be kept in the fridge for up to two days and eaten cold. It can keep for up to 2 weeks in the freezer.
