The temperature is dropping, but the humidity is high. Over the past few days, I have made many fresh summer desserts with ripe mangoes. I also made the pistachio queso kulfi, which is a variation of the traditional Indian ice cream, the authentic Malaysian kulfi. This creamy and grainy frozen dessert is made with skim milk, malai or fresh cream and is flavored with queso-aka saffron, cardamom and chopped pistachios.
It’s always one of the favorites at our house, and as I prepared it, I couldn’t help but remember enjoying this addictive dessert on a stick in the galleries (narrow streets) of Hyderabad’s Charminar district, especially during Ramzan. A certain kulfiwala served kesar pistachios drizzled with pink syrup and liberally sprinkled with pistachios. I can never forget this culinary memory engraved in my heart 🙂 .

When making kulfi, I don’t recommend taking the shortcut of powdered, evaporated or condensed milk unless you are tight on time. For a really simple taste, let the whole milk cook slowly until it thickens and changes color. Saffron adds richness and flavor, giving the kulfi a pleasant touch and taste. Coarsely chopped unsalted pistachios give the kulfi a nutty texture. I added the cornmeal to the reconstituted milk and stirred continuously until the milk thickened and became a smooth mixture without lumps. The addition of cornmeal gives the milk a creamy texture and reduces the formation of crystals in the kulfi when it is frozen.
If you want to make a lighter version, use skim milk and thicken the milk with cornmeal. You can cook the kufli the traditional way in clay pots or on a lathe. I did the kesar pista kulfi in aluminum kulfi molds, which you can find in most stores. It can also be done in stainless steel katori molds or ice cream molds. Although it is a time-consuming dessert, the recipe for Kesar Pista Kulfi is easy to prepare as long as you have good quality saffron and fresh unsalted pistachios.
