This is a traditional Chinese dish. It’s made with mushrooms, peanuts and soy sauce, cooked together in an aromatic dark-brown paste of ginger and garlic. The name comes from the town where it was first invented: K’ang-Pao City.

Then I’d like to share this unique Kung Pao mushroom variation made using king oyster mushrooms.

The king oyster mushroom is a unique component. It may have a texture and taste that is quite close to meat if cooked properly. Kung Pao Sauce Facts

In Szechuan cuisine, Kung Pao sauce is a famous home style stir fried sauce. Kung pao sauce contains two layers of taste: one from spices, and the other from soy sauce, vinegar, and sugar, which work together to create a balanced flavor. To begin, we sauté garlic, ginger, and scallion in a dry red pepper sauce. This flavor is known as “”, which translates to “fried chili pepper flavor.” To get this distinct flavor, the dried chili pepper should be cooked until slightly darkened red. 

The second layer has a savory flavor that is complemented with sugar, vinegar, and soy sauce, as well as starch. Starch thickens the sauce and helps it attach to the component. Prepare the sauce ahead of time and allow all of the ingredients come together before preparing any kong pao meals. 

Instructions

In a small dish, combine all of the spices for the kung pao sauce. Prepare additional aromatics while cutting the chile pepper into quarters.

Add oil to a pan and slowly cook half of the onion parts, dried chili pepper, ginger, garlic, and Sichuan peppercorn until fragrant.

Add the mushroom to the mix. Cook for 2 to 3 minutes, or until the mushrooms are tender.

Pour in the sauce that has been blended. Mix well, making sure that all of the cubes are properly covered with sauce. But don’t forget to re-stir the sauce before using it.

After that, toss in the roasted peanuts and the remaining onion parts. The crispness of the peanuts must be preserved.

Toss everything together in a large stir fry. Remove from the oven and serve immediately.

Ingredients

  • 2 king oyster mushrooms or 4 lesser oyster mushrooms
  • 1/2 cup skinless toasted or fried peanuts
  • 2 big Chinese onions, just the white portion, sliced into 1cm thick slices
  • 6 to 10 dried chile peppers, sectioned
  • 2 tbsp. oil (cooking)
  • 1 tbsp. Sichuan peppercorns, whole
  • 1 inch ginger, peeled and chopped into tiny pieces
  • 3 garlic cloves, peeled and chopped into tiny pieces

Kong Pao Sauce in a Bowl

  • 1 tbsp soy sauce (mild)
  • 1/2 teaspoon salt, or salt to taste
  • 1/2 tbsp. soy sauce (dark)
  • 2 tablespoons cornstarch
  • 1 tbsp. balsamic vinegar
  • 2 tablespoons of water
  • 1/2 teaspoon of sugar
