I’m sure you’ve all eaten the traditional Palak Paneer, but have you ever tried paneer and spinach in a stir fry? This palak paneer stir fry is delicious and filling, plus it’s ready in under 30 minutes! For a hearty dinner, serve with fresh rotis.

In my refrigerator, I always keep a block of paneer. It comes in useful on those hectic days when I have a lot on my plate and just have 30 minutes to prepare supper. Because paneer does not need cooking, most of the recipes that call for it come together fast.

Paneer is a versatile ingredient with which I like experimenting. Given the number of paneer dishes I’ve published on the site, from paneer lasagna to smoked tandoori paneer sandwich to schezwan paneer momos, I’m sure you already know that.

I’ve been cooking this simple paneer and spinach stir-fry for a few months now. I recall having a carton of spinach in my refrigerator that was ready to go bad, as well as a cube of paneer. But I didn’t feel like cooking palak paneer, so I made this stir-fry instead, which was so delicious that Sarvesh demanded I post it on the blog. Palak paneer bhurji is another name for it.

You may use homemade or store-bought paneer in this recipe. If you’re using store-bought paneer, soak it for 20 minutes in warm water before using it in the recipe. In this dish, I use a 1:1 mix of paneer and spinach.

In this dish, I prefer to use baby spinach, which I finely cut before using.

Seasonings include fresh garlic, curry leaves, and spices such as coriander, turmeric, and garam masala. If you want your meal hot, you may certainly add more red chili powder or extra green chilies.

Step-by-Step Procedure

1- In a medium-sized pan, heat 1 tablespoon of oil. When the pan is heated, add the cumin seeds and allow them to sizzle. Add the hing and cook for a few seconds.

2- Add the chopped onion, garlic, green chili, and curry leaves after that. Add a quarter teaspoon of salt as well. Cook, stirring often, for 3 minutes, or until the onions have softened and turned translucent.

3- Toss in the finely chopped paneer (you can cut paneer in whatever way you like, I like to cut them really small for this recipe).

4- Add the remaining 1/4 teaspoon salt, 1/2 teaspoon coriander powder, 1/4 teaspoon turmeric, 1/4 teaspoon garam masala, and 1/2 teaspoon coriander powder. To mix, stir everything together.

5- Cook the spices for 1 minute with 2 to 3 tablespoons water.

6- Add all of the finely chopped spinach to the pan at this point. When you stir everything together, the spinach will start to wilt.

7- Once combined, cover the pan with a lid and simmer for about 4 minutes on low-medium heat.

8- Remove the cover; most of the water should have evaporated by this point. You may cook the stir-fry for a few minutes longer if you want it to be very dry. I like it to be somewhat wet. Stir in the crushed kasuri methi and remove from the fire.

Suggestions for Serving

This goes well with fresh rotis. You can also serve it with rice or quinoa and dal. Other suggestions:

  • It may be used to create quesadillas.
  • Sandwich filling
  • Add some cabbage and onion to the rolls for crunch.
  • I also eat it plain with chopped onion, tomato, and cucumber on occasion (like a salad).

Vegan Alternative

If you wish to make this vegan, use extra-firm tofu for the paneer. To remove extra moisture from the tofu, press it with a heavy object for 30 minutes before using it in the recipe.

Tips

  • For added sharpness, squeeze in some fresh lemon juice towards the end.
  • If you want, you may double the quantity of spinach in the recipe. Personally, I like a 1:1 mix of paneer and palak in this stir fry.
  • It’s simple to double this recipe.
  • I like to keep things simple, but you can make it creamier by adding more coconut milk or cream.
  • If you’re using store-bought paneer, soak it for 20 minutes in warm water before using it in the recipe. The paneer becomes softer as a result of this.
  • If you want to make this gluten-free, be sure to use gluten-free hing or leave it out entirely.
