Compared to white sushi rice, brown sushi rice not only has a higher nutritional value, but also a slightly nutty flavor.  I love the added flavor of the brown rice.

Is brown sushi rice a whole grain rice?

How can I prepare brown sushi rice to replace regular white sushi rice?

Mark Bittman’s book How to Cook Everything is one of my recommendations when I’m looking for a recipe. There is an amazing variety and depth of choice in this important book. Mark Bittman often presents the classic recipe, but also suggests other ways to make it if you’re looking for something different.

For the past few years, I’ve been following her method of replacing white rice with brown rice in recipes. Basically, you bring the water to a boil, add the desired amount of brown rice and then turn off the heat to simmer. Let the brown rice cook for another 10-15 minutes before removing it from the heat. I have found that 12 minutes is perfect for me. Maybe you should see how much time you can use. Then remove the pan from the heat and strain the rice. You can now use this rice in the same way as uncooked rice in a recipe with white rice.

Steps for the preparation of brown rice

The first step above is essentially steaming the brown rice. The rice can be steamed ahead of time, and the rice can be kept cooked for further cooking later. Since many people don’t like the long cooking time of brown rice, pre-cooking shortens the time it takes to cook the dish.

If you are cooking the rice in the second step, you can do so in a pan on the stove or in an electric rice cooker. I have used both methods with the same result. However, nothing beats a rice cooker when you have guests over and don’t want to know when to cook the rice at the last minute. The rice cooker keeps the rice warm and ready to serve.

I got my rice cooker for Father’s Day a few years ago.  This is one of the best gifts I have ever received! Okay, I’m easy to please!  I recommend buying a rice cooker, like the Hamilton Beach Rice and Hot Cereal Cooker, or an Instant Pot, a programmable multi-purpose cooker.

In the third step, remove the hot brown sushi rice to let it cool while adding the vinegar mixture (sushi sushi) described in the following recipe.

In short, compared to white sushi rice, the only extra step required to prepare brown sushi rice is the steaming step described above.  And this step only takes about 12 minutes!

How do I use brown sushi rice?

As you can imagine, brown sushi rice can be used for any dish in which you use white sushi rice.  For example, you can make sushi with brown rice.  My favorite brown rice sushi dish is sushi cup (or kirashi sushi).  I love that anyone can make their own sushi dish without having to wrap anything in seaweed paper.  Just put all the ingredients on the table and let everyone choose the fish and vegetables they like best.

Short-grain brown rice

  • 2 cups brown rice (uncooked)
  • 3 cups of water on the first and second floor
  • 1 pinch of salt

Vinegar mixture (sushi-su)

  • 4 teaspoons sugar
  • 3 1/2 cups of rice vinegar
  • 2 teaspoons salt


Preparation of brown rice

  • Rinse the brown rice in a colander. Rinse until the water is clear.
  • Bring 3 cups of water to a boil. Add a pinch of salt. Add the brown rice. Cover and turn the heat down low so bubbles form. Let them cook for 12 minutes.
  • Remove from the pan and strain the rice. Allow to cool slightly, but it is not necessary to cool completely.
  • Place 3 cups in a saucepan and bring to a boil. Add the cooked brown rice, stir and cover. Reduce the heat to a boil. Let them cook for 15 minutes. (This may take a few minutes longer, so keep an eye on the rice and make sure it’s still very moist). But don’t overcook it, the rice should be firm.
  • Remove the covered pan from the heat. Place a thin towel under the lid and close the lid. Let the pan stand for another 10 minutes before removing the lid and towel. During this time the rice can cook a little more and the moisture can evaporate.
  • Place the rice in a large glass or ceramic bowl. The cup should be large, so you can move the rice around and it doesn’t accumulate too much. Let’s sit down for a few minutes. Take a flat wooden spoon (preferably with a wide end) and gently fluff the rice with it. For me, moving is like folding beaten egg whites into a cake batter. Pick up the rice pieces very carefully before placing them back in the machine. This cools the rice without making it stickier or more viscous.
  • When the rice has cooled, add the vinegar (sushi sushi) to the rice with the same wooden spoon, moving gently. It’s not a good idea to add vinegar to the rice while it’s still warm, as this will complicate the preparation of the sushi. It may not matter so much with sushi platters, but I still recommend waiting.
