The rabri, or rabdi, is a traditional Indian classic sweet. A rich dessert that is a mixture of thickened creamy milk and pieces of malai (on top of the milk), lightly sweetened and flavored with saffron and cardamom powder. Making a true rabbi’s recipe is a laborious process of boiling whole milk on low heat until it becomes a thick paste. The key to a rich and creamy Rabri is the quality of the milk used and boiling it on low heat. Always use whole milk and cream to prepare the rabdi.
My family enjoys a fresh and creamy Rabdi served with a scoop of ice cream. Yes, you heard me right. It is one of the most amazing food combinations you can find. Another one of my favorite fruit bunnies that is super easy to put together, especially if you’re having a party at home. Cut fruits like apple, pomegranate, grape, strawberry into bite-sized pieces, put them in a bowl, add cold rabbit and chopped nuts of your choice and you have a divine dessert. The shrimp can be served hot or cold. Also served with jalebi, gulab jamun, shahi tukda and malpua.
