Rice Flour – How to make rice flour for snacks at home.

The rice flour aka biyyam pindi (Telugu) is an indispensable ingredient in South Indian cuisine. What can you do with rice flour? This gluten free flour is used for making snacks (pindi vantalu) like murukku, jantikalu, palakayalu etc and prasadam (offerings to God) like kudumulu, undrallu, apalu, ammini kojokottai etc. After receiving repeated requests for a rice flour recipe for making snacks, I photographed the entire process when I made a jackpot for Ganesh Chaturthy’s recipes. Extremely simple, but requires a little effort.

Homemade rice flour

The rice should soak for at least an hour. I recommend soaking the flour for 2-3 hours, as the flour will soften. Use good quality raw white rice, such as Sona Masuri. Let the rice dry on a cotton towel in the shade until it is almost dry and not very damp. I usually put newspaper on the floor, spread the cotton cloth over the paper, and then spread the drained rice in a thin layer.

After sifting the rice flour, the remaining coarse rava can be ground into a smooth flour or used for recipes that require rava (coarse rice). A small amount of rice flour can be made at home, and larger amounts (more than a kilo) can be sent to a nearby mill. I used to prepare biyam pindi with 1 kg of rice at festivals like Ganesh Chaturthi to make naiviyam (offerings to God).
