Now, some people like full-fat ice cream, while others are more fruity and less creamy, and we fall into the latter category.

This homemade strawberry ice cream contains both milk butter and coconut butter, but there is absolutely no reason not to replace the milk butter with extra coconut butter. A simple and direct exchange!

Ingredients you need for this strawberry ice cream

  • Strawberries (fresh or frozen)
  • Coconut cream
  • 35%+ fat milk cream
  • Sugar
  • Lime juice
  • Vanilla essence / perfume
  • Salt

Note that you can replace the milk with extra coconut cream. It’s the coconut cream, not the coconut milk, that you need!

How to make homemade ice cream without an ice cream maker

In ice cream making, the ice cream is prepared in liquid form, air is added to make the ice cream clearer after freezing, and the ice cream is mixed during freezing to obtain the fine ice crystals.

If you don’t have an ice cream maker, you can still make ice cream, but you’ll have to do a little more manual work to do what the ice cream maker does for you, which is mix the ice cream and break up the ice crystals as they freeze.

Liquid ice cream is properly prepared before you freeze it. During whispering, air is supplied. You can also use a mixer or an electric hand mixer, depending on the type of ice cream you want to make.

To make popsicles, you need to puree the fruit, which is difficult by hand – that’s where the blender comes in. You can also do it with a handheld device like a whisk or food processor, but the blender is by far the best device for this batch.

There are two main types of ice machines. A pre-frozen bowl with an electric paddle wheel for defrosting and partial freezing, and a fully toasted ice cream machine with a built-in payer, which are quite expensive.

These machines thaw the ice cream and freeze it at the same time, which can’t be replicated exactly by hand because you can’t physically sit in the freezer and turn the mixture over as it freezes.

If you don’t have a machine, the best solution is to whip the ice cream while it’s frozen, or mix it with a fork without letting it get too hot.

Some recipes require you to physically remove the ice cream from the container and whip it up again in the blender halfway through. We think it’s crazy because it heats up too much, we lose too many ingredients when we move the ice from the container to the blender and back again, and who wants to do all those dishes?

Just take the ice cream out of the freezer, mix it quickly with a fork or hand mixer, then put it back in the freezer. Keep doing this every hour until the ice cream is fairly firm.

The ice cream maker has certainly remained simple. The easiest machine with a built-in compressor, but they are quite expensive. The second easiest way is frozen peels, unless you want to make a large quantity, for example. B. for a party, in which case you may prefer a model with ice and salt.

The method of making ice cream is pretty much the same, with or without a machine. Either the machine makes the ice full, as on-board compressors do, or much less stirring is required during part of the freezing process.

How to make homemade strawberry ice cream

Take fresh strawberries and wash them, then remove the top stems. Cut off the parts that are dark or very bruised.

Sprinkle the strawberries with sugar, then add the coconut cream and milk fat and vanilla essence or flavoring. These creams must contain at least 35% fat to obtain a creamy ice cream and emulsify the fruit juice to make it creamy.

If you are using an ice cream maker with a compressor, simply add the ingredients and follow the manufacturer’s time instructions – let the machine do all the work.

Use of frozen ice machine

If using a freezer bowl, make sure the ice cream maker bowl is frozen for at least 12 hours, and at least 24 hours – again, follow the manufacturer’s instructions.

Either way, it’s a good idea to put the mixed ingredients in the fridge or freezer to get super cold before you use them. Set up the machine with the frozen bowl and stirrer and turn it on before adding the cold strawberry ice cream puree. Let it run for 20 to 30 minutes before placing it in the freezer container.

After freezing for an hour or two, when the surface is hard but still smooth to the touch, remove from the freezer and whisk or mix briefly with a mixer, whisk or fork to break up the ice crystals.

Place in the freezer for another hour and repeat.

Manual operation and non-operation of the machine

If the ice cream is made by hand and without a machine, the mixture from the blender is put directly into the freezer and frozen.

Take the ice cream out every hour and stir it with a fork, whisk or mixer; then put it back in the freezer. Do this as soon as possible to reduce the heat. Repeat every hour until the ice is no longer cracking.

  • 1 Pfund (450 g) fresh red bears
  • 1 cup white sugar
  • 1 cup cream of cocoa nuts 1 1 1 1
  • ½ cup whipped cream or heavy cream can be used in place of coconut cream
  • ½ teaspoon vanilla aroma
  • 1 lime (juice)
  • ½ teaspoon salt
  • Rinse the strawberries, shake them and put them in the blender. Add the sugar and stir the puree for a few minutes.
  • Add the coconut cream, whipping cream, lime juice, vanilla flavoring and salt and continue to mix on high speed for a few more minutes.
  • Pour the mixture into a container with a lid and refrigerate for at least two hours, preferably longer.
  • If the mixture is very cold, put it in the freezer and stir until it is partially frozen. Put them in a covered container for the freezer and freeze.
  • If you don’t have ice, put it in a shallow, covered container and freeze it for at least an hour. Remove and beat the mixture with a small whisk, hand mixer or fork to break up the ice crystals and let air in. Repeat freezing and whipping hour by hour at least two more times.
  • Remove from freezer just before serving and allow to warm slightly to scoop up cake and serve immediately.

For a dairy-free version suitable for vegans and all dairy lovers, simply use more coconut cream in this recipe instead of heavy whipping cream. The result will be almost the same, with a little more coconut in the flavor.
Give the ice cream an extra kick while it freezes, as the butter in coconut cream has a slightly lower fat content than most dairy products.
