There’s plenty to love about a slice of Mexican pizza topped with a big ol’ pile of chicken, a heaping helping of shredded beef, and a hefty load of rice. But sometimes, a slice just isn’t enough. That’s where a delicious, spicy side comes in. These Roast Potatoes are a tasty alternative to a traditional starch, a good source of a fiber-rich food group, and a healthy side dish for any meal.

When you think of potatoes, you probably think of the creamy, buttery variety that comes from a bag of frozen potatoes. I’m going to show you that you can make it a bit more spicy and a bit more savory if you use a pressure cooker.

Potatoes to Use in a Potato Roast 

To create delicious roast potatoes, follow these steps. Any potato type with a medium starch content would suffice. Make sure they’re solid and have plenty of water. 

To prepare roast potatoes, I choose waxy potato types because they are fluffy on the inside and retain their form well, resulting in a crispy surface. Red potatoes or Yukon golds, which are ultra-creamy, may be used.

Potatoes containing a lot of starch, such as russets, should be avoided. In India, we don’t have access to as many potato types as we have in the United States, so select waxy potatoes rather than those with a floury feel.

The Best Potato Seasoning

For the greatest flavor, I keep potato seasoning to a minimum. Use a small number of ingredients, but select them carefully so that the flavor comes through. Salt, coriander, a pinch of turmeric, red chilli powder, and freshly crushed dried pomegranate seeds were used to season these Indian roast potatoes. These are the game-changing elements. It gives these seasoned potatoes a wonderful crunch and flavor.

Freshly crushed flax seeds and sesame seeds were also used to complete these fast roast potatoes. These enhance the crispness of the potatoes while also providing a significant amount of nutrients to these spicy potatoes. 

The amount of nutrients packed into these tiny seeds will astound you. Flaxseeds are often used in my recipes to provide additional calcium, omega-3 fatty acids, fiber, and other minerals. Sesame seeds, often known as til, are high in calcium and healthful fats.

What is the best way to make it?

I start by gently frying the spices in a skillet before adding the cooked cubed potatoes.

Cook potatoes until they are slightly crisp on both sides. Cook for another 2-3 minutes after adding the ground flaxseed and toasted sesame seeds.

The potatoes are beautifully spiced and crispy at this point. It’s very simple to create. Serve as a toast topping, a sandwich filler with paratha and curd, or just as a tea snack.

How to Eat Flaxseed Correctly

The best method to eat flaxseed is as ground flaxseed. Because whole flax seeds travel through the digestive system undigested, our bodies are unable to benefit from them. Use ground flaxseed for the best nutrient absorption from flaxseeds.

I used roasted and powdered flaxseed powder in this recipe, which adds flavor and nutrients while also making the potatoes more crispy. 

Notes about the recipe:

  • Use potatoes that aren’t overly starchy since they break easily when boiled.
  • Potatoes should not be overcooked. After cooking, the potatoes should be firm.
  • For flavor and nutrition, add ground flaxseed near the end.
  • If desired, a few drops of lemon juice and minced coriander may be added.

Instructions
