You can’t beat a bowl of pasta for dinner. But, if you’re eating a traditional spaghetti bolognese with big hunks of meat and a side of garlic bread, it’s easy to eat all day long. If you’re looking for a lighter and healthier meal, try this spinach pesto pasta recipe.

I’ve always been a fan of pesto. Since it’s a perfect sauce to go with zoodles, I decided to come up with a low carb pasta using the popular pesto sauce. The best part about this recipe is that it tastes just like the original version!

Ingredients required

Spinach: Both fresh and frozen spinach leaves are suitable. Fresh spinach gives the dish the best flavor.

Broccoli: Fresh broccoli is best for this recipe. This gives a better texture. Do not use frozen broccoli.

Parmesan cheese: Fresh Parmesan cheese is the secret to this creamy and tasty spinach pesto pasta.

Noodles: All forms of pasta are suitable. I made it with instant noodles and fusilli pasta.

Herbs: There are two options: bouillon cubes for soup or use the starter that comes with the instant noodles

Mix the spices: basil leaves, chili flakes, mixed herbs, paprika, black pepper

Spinach Pesto Pasta Preparation

Making pesto

  • Bring water to a boil in a saucepan.
  • Add salt and then the broccoli cut into small florets and the chopped spinach.
  • Turn off the heat and blanch the broccoli and spinach in hot water for 2 to 3 minutes.
  • Now place the broccoli and spinach in ice water after you drain the water.
  • This step ensures that both vegetables retain their green color and do not taste raw in the pasta.
  • Remove them from the ice water, add them to the pesto and set aside.

For the preparation of noodles

  • To cook the pasta, heat the water.
  • Add the pasta to the boiling water.
  • If you are using the pre-taster that comes in the package of the instant noodles, add it while the noodles are cooking.
  • If you don’t use instant noodles
  • Cook for a few minutes until the pasta is cooked. Leave some liquid behind to dry later. Remove the pan from the heat.
  • If you are using regular pasta, you can use a bouillon cube.
  • If you don’t want to use a starter or stock cube, you can add a mixture of chili flakes, a blend of spices, paprika and black pepper.
  • Now add the green pesto. You can adjust the amount of salt if you want to add more, and mix them well.
  • Serve this pasta with green spinach and enjoy a delicious pasta with a healthy twist.

Making pesto
