I’ve recently started eating a gut-healthy vegetarian, gluten-free, and dairy-free diet. The only difference is that I use ghee, butter, and eggs in this recipe. In a future article, I’ll go into why this is and how it works. For the time being, I’m going to share this wonderful rice dish.

Healthy Gut-Friendly Recipe

To address my hormone imbalance problem, I’ve been following a gluten-free, anti-inflammatory, gut-healthy, dairy-free diet for the last several weeks for health reasons. This recipe checks all of the boxes. It contains all of the healthy fats that are required for proper hormone activity and release. I’ve been doing it regularly for four weeks now, and I’m already seeing results.

White rice is often associated with a high Glycemic index. However, the overall glycemic load of the meal is significantly decreased thanks to healthful fats like ghee, coconut milk, and cashew.

When you serve the rice after it has cooled, the resistant starch content rises. Resistant starch is very beneficial to gut health.  

Spinach Rice Ingredients

I pureed spinach greens after washing them.

Moringa leaves powder is a powder made from dried moringa leaves. 

Cashew: 

Coconut milk has healthy lipids that assist in weight reduction. This is also high in antioxidants.

GHEE: It’s a good saturated fat that helps with gut health and lowers inflammation in the body. It contains a lot of Omega-3 fatty acids. Linoleic acid in ghee helps to increase fatness, which may surprise you. Make sure you use the appropriate amounts. 

Cumin, clones, bag leaf, cardamom, and whole red chilli are all whole spices.

Basmati Rice: A recipe for extra-long basmati rice.

Spaghetti with Spinach

To begin, rinse and wash the spinach leaves, then create a thick paste with water and set aside.

Basmati rice should be rinsed and soaked for 10 minutes. 

After 10 minutes, drain the water from the rice.

In a pressure cooker, heat the ghee and saute the cumin seeds and entire spices on low heat.

Fry the cashews for a few minutes. Add the grated ginger and cook for another minute.

Add the drained rice and cook for another 2 minutes.

Add the spinach, mint, and coriander pastes, as well as the green chili paste.

Mix in the water, then add the coconut milk and mix again.

Add the Morinaga powder and salt at this point. Cook for one whistle on medium heat.

Open the lid after releasing the pressure. Serve the rice hot or cold, fluffed up.

Rice Cooking Instructions

  • Rice that has been soaked for 10 minutes will be unusually lengthy. As a result, you must soak the rice before cooking it.
  • Sprinkle toasted sesame seeds on top before serving to enhance flavor and nutrients.
  • A generous squeeze of lime juice adds to the flavor. More significantly, the vitamin C in lime juice aids with iron absorption. 

Moringa Health Advantages

Moringa leaves are an excellent source of antioxidants and anti-inflammatory compounds. Calcium, iron, potassium, Vitamin A, Vitamin C, and Vitamin E are all found in these leaves.

Because of all of these nutrients, it may aid in the prevention and management of lifestyle and metabolic illnesses like as diabetes. When taken properly, it helps to reduce inflammation and discomfort due to its anti-inflammatory effects. (Source)

We all know how good spinach is for you. Spinach is high in antioxidants as well as soluble and insoluble fiber. This is beneficial to both gastrointestinal and heart health. 

What Is The Best Way To Serve Spinach Rice? 

It’s delicious with simple yogurt or raita. I like to serve it with full moong dal, tzatziki, and homemade mango pickle, as well as poppadom. If you want, you may eat them plain or with any of these dals. I like to add 12 teaspoons of sesame seeds to my salad for added nutrients and crunch.

Storage

These spinach and moringa rice may be stored in an airtight jar in the refrigerator for up to two days. 

Allow the spinach rice to cool before freezing. You may freeze them for up to 8 weeks if you keep them in an airtight freezer-safe container.

Instructions
