This is a dish that I ate when I was in China. It’s very spicy, so I normally serve it with rice. It’s also called Kung Pao Shrimp Stir-Fry. I usually buy shrimp from a Chinese supermarket, but if you don’t have time, frozen shrimp is a great substitute. It’s just like the ones you buy in the frozen section in the US, although the size is about half of what you’d find in the US.

There’s this little restaurant near where I live in the Monterey Bay Area. I’m not sure if they are still there, but I remember they used to make a delicious hot and sour pepper stir-fry with squid (I think it was squid) and shrimp (like the ones in cold sesame oil). There was a lot of fresh ginger, garlic, hot mustard oil, and a little bit of bean paste for flavor that I loved. Some other ingredients I can’t remember. I used to order it often. Sichuan peppercorn, dried chili pepper, and aromatics are often used in Szechuan stir fries. This one may resemble Mala chicken in appearance. Rather of being dry-cooked, the shrimp in this variation are very delicate.

  • 1 tsp. pepper, ground
  • 1 tbsp soy sauce (mild)
  • 1 tblsp. shredded ginger
  • Shaoxing wine, 1 tsp
  • 2 tablespoons cornstarch

  • 3 garlic cloves, chopped
  • 1 tblsp. ginger (chopped)
  • 3 scallions (cut into quarters)
  • 3 tablespoons vegetable frying oil (distributed)
  • 1/2 cup pre-soaked dried chili pepper
  • 1 teaspoon Sichuan pepper
  • a half teaspoon of doubanjiang
  • 1 tbsp soy sauce (mild)
  • cooking wine (1/2 tbsp.)
  • 1 teaspoon sesame seeds, roasted
