Thai Omelet Recipe – Kai Jiew or Khai Jiao Recipe

Thai omelets are not only one of the healthiest breakfasts, it’s also one of the easiest to make. You can pull these delicious omelets out of your oven in the morning and let the family enjoy it with their coffee, or you can mix up the mixture in the morning and then just heat it in the oven when you get home.

If you’re looking for a Thai omelet recipe, I’d strongly recommend you look elsewhere. There are multiple versions of this dish, with slight variations but the main ingredients are the same. Although this dish is called Kai Jiew or khai jiao in Thai, it is more commonly known in Thai cuisine as Kueh Jiew (กุ้งจีวย) and Kueh Jaew (กุ้งจีวยจัด).

Thai omelet is a golden, crisp omelet eaten as a rice topping in Thailand. Unlike other omelettes, this one isn’t eaten for breakfast; instead, it’s served as a main course with rice or any sour and spicy food.

To create an airy batter, mix together eggs, lemon juice or vinegar, and fish sauce. Thai omelette is made using this batter.

If you don’t eat fish or meat, like me, you may use soy sauce instead of fish sauce to create Thai omelette or Khai Jiao.

Thai omelette requires just a few ingredients and is simple to prepare. This necessitates a unique method that differs somewhat from standard omelette preparation.

Thai Omelette Ingredients

Eggs: I like organic free-range eggs. These have the greatest flavor. Regular eggs may also be used.

Corn Flour: This is optional, but it gives the omelette a nice texture and wispy crispy edges.

Spices & Seasonings: Salt, Chilli sauce, soy sauce

Deep-frying oil: Any vegetable oil will suffice. Olive oil is my preferred choice.

However, like with other meals, this kai jiew may be made in a variety of ways. Thai omelette is often served over jasmine rice with a spicy bite from hot sauce/sriracha sauce.

You may also add some chilli sauce or hot sauce to the batter if you want it to be spicier. Almost a thousand people requested for more heat in my Spanish omelette video recipe, so I added some spicy sauce to the batter in this recipe.

How to Make a Great Thai Omelette

  • I add a little of corn flour to the omelette batter to make it crispier.
  • The main item you’ll need for this deep-fried omelette is either a wok or a kadhai. The reason for this is because we need a smaller surface area for the batter to stay concentrated. Otherwise, it may fall flat during cooking and not be as crispy as desired.
  • When putting batter into the pan, be sure to pour it from a height that will assist the omelet develop crispy edges.
  • Before you pour the omelet batter into the pan, the oil should be blazing hot.

Recipe for Thai Omelet (Kai Jiew or Khai Jiao)

Instructions

  • In a medium bowl, whisk together the eggs, salt, soy sauce, corn starch, and lime juice. Wish till the batter is foamy and no white streaks of egg whites remain.

  • In a wok, heat the oil until it reaches smoking temperature.

  • Pour the egg mixture into the heated oil while holding the egg bowl at a good height of approximately 10-12 inches above the wok.

  • Cook/deep fry the egg mixture for about 1 minute, or until the edges are crispy.

  • Cook until the omelette is light golden brown on the other side.

  • Serve the heated omelette over a steaming dish of rice with spicy sauce or Sriracha sauce on the side.
