Vegan Masala Chai

Vegan Masala Chai is a traditional Indian Masala tea spiced with cinnamon, ginger, cardamom, and cloves.  It is also served cold in the summer months, and this recipe is vegan, so you can enjoy all year long.  The recipe is very simple, but the resulting cup is delicious, so give it a try.  You can also make it ahead of time, it will keep for a couple of weeks or so.

At first I was just curious, and last year I wanted to limit my dairy intake to see if it would help my skin (I have severe acne). Last year I went vegetarian for a month, and this year I did the same again. Giving up dairy hasn’t helped my skin much (I have other health issues), but going vegan has helped me perfect my recipe for vegan masala tea. Honestly, when I decided to go vegan for a month, I was mostly worried about my tea. Everything else was very easy for me as a vegetarian. I’m not a big fan of cheese or melted butter, so I could do without and not care. But tea is different. You know, for Indians, tea is not just a drink, it is a part of our existence and I cannot live without it. I need my Indian tea to start my day, nothing else works for me. So my husband, who is a real tea expert in our house, started experimenting with all the herbal alternatives. We’ve tried almost every alternative there is.

Experiments with vegetable milk in tea

So when we started making the perfect vegan tea, we tried different plant-based milks. We also tried to make tea with different techniques. First, let’s talk about the different types of plant-based milks we tried in our tea. Soy milk: no for me, I could not drink this tea no matter what technique I used. There was a strong aftertaste. Coconut milk: I’m not a fan of this either because it gives the tea a strong coconut flavor that I personally don’t like. Almond milk: slightly better than soy milk. It was better when heated separately and then mixed with the tea, but it was still far from perfect. Oat milk: Then I noticed a big change. Oat milk goes very well with tea, especially if you don’t boil it with the water and spices, but heat it separately – that works well. I liked the Oatly brand. But I was still not 100% satisfied, I still missed my usual tea. Cashew milk: Here it is, the turning point of the game! It changed my mind about vegan tea and made me believe that you can make real Indian tea with vegan milk. Over the past few months, I’ve made several cups of tea with cashew milk and found the perfect ratio and technique to share with you! Cashew milk tea is so similar to real tea that you will hardly notice the difference.

Various techniques for making vegan tea

When we make tea, we traditionally boil water with herbs, then add milk and boil the tea some more. This is how traditional Indian tea is prepared. But through trial and error, this technique has been found to not work with plant-based milk. If you add plant milk (cashew milk in my recipe) to a boiling pot and let it boil, it will change the final flavor of the tea. We tried it with all the herbal milk drinks, and each time preferred a tea where the herbs and tea leaves were brewed separately and then poured into the hot milk. So to make a vegan tea, you first need to steep the spices and tea leaves separately. Then heat the milk separately (without letting it boil) and mix them together. This is how the tea will taste best! These are my experiences so far.

Ingredients

To prepare a simple tea, we always need 4 basic ingredients: water, milk (dairy or non-dairy in this case), sugar and tea leaves. Spices are added in the preparation of masala tea. word-image-5210

  • tea leaves: To make Indian tea, you need Indian black tea in bulk. You can easily find them in Indian grocery stores. There are so many brands, and everyone has their own personal preference. I love the Society brand.
  • Cashew milk: You will need unsweetened cashew milk for this recipe. My absolute favorite is unsweetened cashew milk from the Forager brand (no sponsor, but I love it).
  • Herbs: To make masala tea, you need spices like green cardamom, cloves, peppercorns. It also has ginger in it.
  • Sugar: This option is optional and you can use it or not. You can use white sugar, raw sugar, jaggery or any other sweetener.

Step-by-step instructions

1- Lightly mash the cardamom, cloves and peppercorns with a mortar and pestle. Add the water to the pan, then the grated ginger, crushed cardamom, cloves and peppercorns. Bring to a boil over medium heat. When it boils (it takes a few minutes), let it boil for another minute. Now the color of the water changes as all the spices seep into the water. 2- Add the dissolved tea leaves and cook for another minute. Meanwhile, heat the milk and cashews in another pan or in a steamer. You don’t have to cook it, just heat it up. 3- After 1 minute, remove the pan from the heat and strain the tea into a cup using a strainer. 4-Pass the hot cashew milk through the same strainer. Tips and tricks

  • Other spices such as fennel seeds and cinnamon can also be added to the tea.
  • The spices in the tea can be varied according to taste. You don’t like ginger? Leave it out or use half the amount. Do you prefer green cardamom? Double the amount.
  • This tea should be served immediately. I don’t recommend boiling the tea and then reheating it – the taste is not the same.
  • If you can’t find cashew milk, oat milk is the best alternative. I recommend the Oatly brand, the ones in the blue cardboard box. Follow the same recipe, but use oat milk instead of cashews.
