There is no denying that Chinese fried egg rice is delicious. Whenever my family goes to a Chinese restaurant, we always order a big plate of Yang Chow fried rice. But what’s even better is that you can now enjoy this fried rice anytime. All you have to do is prepare all the ingredients in advance. And the next time you want to make it, you’ll have better fried rice than at home in no time.

Yang Chow fried rice, Yang Chow fried rice or Yong Chow fried rice is a popular rice dish fried the Chinese way in many Chinese restaurants around the world. In the UK it is usually sold as special fried rice, and in the US as homemade fried rice. The fried rice comes from the city of Yangzhou in Jiangsu province. But nowadays, this dish is usually served in every Chinese restaurant with its own version of yang chow. A typical Yang Chow fried rice contains eggs and protein, usually in the form of pork or chicken and shrimp.

A wok is essential for preparing good fried rice

There are many tips, tricks and advice to prepare a perfect fried rice. But the right texture of fried rice must come from the cooking technique. What gives Chinese food the taste of fried rice has to do with fire. The wok is the best cooking utensil for fried rice. It has several heating zones, making it easy to control the temperature. The spherical shape makes turning and flipping food a breeze, with very little chance of pieces falling out, as they would with a flat pan. It can cause intense heat and lots of wokshark, the essential softening essence you get when you use a wok on high heat.

The food consists of the smoke absorbed by the wok, and this is what gives the wok its flavor in Chinese takeout. It is most noticeable in fried rice, as fried rice has a subtle flavor that makes it the dominant flavor of the dish almost immediately. So if you want the real taste of fried rice, you have to use a wok. If you don’t have a wok, you can also use a cast iron pan or a non-stick pan. Make sure it’s big enough and don’t forget to add enough oil so the ingredients don’t stick to the surface.

Do not skimp on adding oil.

The amount of oil added to the wok is important. Too much oil and the food is fried, too little and the sauteed shark is not reached. The hot oil prevents everything from sticking, spreads the heat and helps distribute the flavor.

Use of cold cooked rice to avoid mouse cooking

The grains must be clear and well separated so that they can be picked up with sticks or a spoon. The outside of the kernels should be light brown, while the inside remains soft. The rice should also be a little soft so you can nibble on it. Leftover cold rice is ideal to use because the grains are separated and easier to cook in a wok. If you keep the rice grains in the fridge overnight, they will freeze, making them easier to separate and your fried rice less likely to become mushy. If you can’t wait, you can also refrigerate the freshly cooked rice for a few hours before cooking it.

Ingredients

  • 6 cups of rice per day
  • 2 eggs, lightly beaten
  • 1 cup Schweinehackfleisch/rotes Schweinefleisch/chinesische Wurst
  • 12 shrimps geschält
  • 1/2 cup peas
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon ground white pepper
  • 1 1/2 tablespoons soy sauce
  • 2 Esslöffel gehackte grüne Zwiebeln, mehr zum Garnieren
  • Frying oil

Instructions

  1. Have all the ingredients ready next to the stove, as you need to be quick when preparing fried rice. Break the rice from the previous day to separate the grains.
  2. In a large frying pan or wok, heat a little oil over medium heat and fry the prawns until they are half cooked. Remove and set aside in a bowl.
  3. Add oil to the wok. Reduce the heat to low to medium. Pour in the eggs and mix a little. When the eggs are half cooked and still raw, add the rice and stir quickly to mix the eggs and rice.
  4. Turn the heat to medium-high. Add the red pork, half-cooked shrimp and green peas. Mix until everything is well incorporated.
  5. Season with salt, sugar, ground white pepper and soy sauce. Taste and adjust the seasoning.
  6. Turn off the heat and sprinkle the onions on top. Stir quickly. Serve hot.
