Yunnan province, the star of western China, is famous for its rice noodles and other rice products (such as Kuwaiti rice), which are particularly popular with locals.

When one thinks of Yunnan rice noodles (过桥米线), they are served with many individual ingredients and a bowl of hot broth. This one is more sophisticated and complicated and therefore better known elsewhere, but this XiaoGuo (小锅米线) is more user-friendly and humble for home use and uses ingredients that are very easy to find and cheap.  Last winter, when I visited my favorite place, Yunnan, I ate these Xiaoguo rice noodles almost every day.

In my hometown, the situation is similar: Deng Deng noodles are more famous, but locals love Mala Xiaomian. Xiao not only emphasizes quantity, but also modest and inexpensive ingredients.

This is my favorite way to prepare xiaoguo rice noodles. The original version uses marinated mustard as the main source of sour flavor, but I add tomatoes to add more flavor to the rice.

Marinated mustard greens (酸菜) or sometimes cabbage are excellent ingredients for soups. Lactic acid bacteria give it a deliciously sour taste. Homemade pickled mustard leaves are even better because of the many groups of bacteria. Use these instructions to buy a packet or make your own marinated mustard leaves. If this ingredient is too hard to come by, you can substitute it with other cucumbers, such as pickled cabbage (kimchi) or pickled radish.

Ingredients

    ground pork
  • 2 portions rice noodles, 150 g dried rice noodles or 300 g fresh noodles
  • 50gChinese fragment, cut into small pieces

  • 1 medium-sized tomato, finely diced
  • 3 tablespoons cooking oil
  • 100 g sauerkraut
    or mustard greens
    , crushed
  • 1400

    water or stock
    , about 6 cups
  • 2 cloves of garlic, finely chopped

    soy sauce, separate
  • Chilli oil for sprinkling

Instructions

  1. Soak the dried rice noodles in cold water for at least 4 hours (overnight soaking is recommended).
  2. Remove the hard ends from the cut strips, then cut them into long pieces. Finely chopped tomatoes and marinated green mustard.
  3. Heat the oil and fry the minced pork and minced garlic until crisp and golden brown. Sprinkle with a tablespoon of light soy sauce and salt. Stir well and then pour in half the ground pork.
  4. Add the green mustard and marinated tomatoes and cook for 2 to 3 minutes until fragrant. Then pour the water. Don’t forget to remove the large mousse after cooking.
  5. Add 2 tablespoons of light soy sauce and salt to season the soup. Then add the soaked rice noodles. Cook for 2 minutes.
  6. Add the bean sprouts and chives. Cook until the soup boils again. Transfer to a pan.
  7. Add the rest of the minced meat and drizzle with red butter. Serve it hot!
